Ingredients
Here’s a quick look at the ingredients you need to make these french onion pork chops. For a full list of ingredients and amounts please head to the full recipe.

- Boneless pork chops – to get a good sear on the pork chops, make sure to pat them dry with a paper towel before cooking.
- Salt and pepper – add salt and pepper to your pork chops to season them and make sure they have a good flavor. You could also add a bit of garlic powder to season your pork.
- Yellow onion – slice your yellow onion and cook them down to create a sweet caramelized onion. Be patient because it can take a bit for the onions to truly caramelize.
- Brown sugar – add the brown sugar to your onion to increase the caramelization and bring out the sweetness.
- Beef broth – beef stock keeps your pork chops juicy and create a bit of sauce like a french onion gravy.
- Gruyere cheese – I love gruyere cheese for the french onion soup pork chops. It makes it feel like french onion soup, and it creates the perfect melt.
You could use bone-in pork chops instead of boneless, but you will need to add cooking time to accommodate the bone. You could also try this recipe with chicken breast instead of pork.
In place of gruyere, you could use your favorite melting cheese, such as swiss cheese or provolone cheese. Cheddar would be good if you like a sharper cheese.
For some nostalgia and crunch, you could add french fried onions on top of your pork chops. You could even make some crispy fried shallots at home and sprinkle those over top.

How to make French Onion Pork Chops

Step 1: Pat pork chops dry. Mix salt and pepper together and season pork chops on both sides with the mixture. Heat oil in an oven safe skillet over medium heat. Allow the oil to get hot and then place the chops in the skillet. Cook the pork chops for 3 minutes each side.

Step 2: While those are cooking, slice the yellow onion in half and then into thin slices and preheat the oven to 375F. Remove the pork chops from the skillet and reduce the heat to medium-low. Pour the sliced onions into the skillet along with oil and butter.

Step 3: Allow the onions to cook for 15 minutes tossing frequently. Season with a pinch of salt and add the brown sugar and onion powder to the skillet. Toss and saute for another 2 minutes.

Step 4: Pour the beef broth into the skillet and allow the mixture to simmer. Turn off the heat and nestle the seared pork chops into the pan and top each one with some of the sauteed onions.

Step 5: Top each pork chop with shredded gruyere cheese. Place in the oven to bake for 8-12 minutes depending on thickness of the chops. Cook until internal temperature reaches 145F. Remove from the oven and serve.
Mad’s Expert Tips for the Best French Onion Pork Chops 🥩
- Be patient with the onions – Caramelized onions need low and slow heat for at least 15-20 minutes. Do not rush them on high heat or they will burn instead of turning sweet and golden.
- Use thicker pork chops – At least 1 inch thick is ideal. Thin chops cook too fast and can dry out. Bone-in pork chops also add extra flavor and help the meat stay juicy.
- Sear the pork chops hot and fast – Get a good golden sear on both sides before finishing in the sauce. This adds flavor and keeps the juices locked inside the meat.

Recipe FAQs
What cheese is best for French onion pork chops?
Gruyere is the classic choice because it melts perfectly and has a nutty, rich flavor. Swiss cheese is a great and a more affordable substitute.
Can I use boneless pork chops?
Yes! Boneless pork chops work fine. Just make sure they are at least 1 inch thick so they do not dry out during cooking.
How do I know when pork chops are done?
Pork chops are done when they reach an internal temperature of 145F. Let them rest for 3 minutes before serving.
Can I reheat French onion pork chops?
The caramelized onions can be made up to 3 days ahead and stored in the fridge. The full dish is best made fresh but leftovers reheat well in a covered pan over low heat.
