Ingredients
- Cornstarch – cornstarch adds the perfect amount of thickening to your strawberries to make them the perfect consistency
- Warm water – water mixes with the cornstarch to ensure there is not a starchy texture in your strawberries
- Fresh strawberries – I cut them into quarters to make them bite size for the dip
- Granulated sugar – the sugar helps create a strawberry syrup and sweetens it perfectly
- Cream cheese – softened cream cheese adds the perfect tang to the dip
- Mascarpone cheese – the mascarpone gives the actual cheesecake flavor and creamy texture
- Powdered sugar – the powdered sugar sweetens your cheesecake dip
- Lemon juice – the lemon adds the perfect amount of acidity to give the cheesecake dip depth and a classic cheesecake flavor
- Lemon zest – I love adding a bit of zest from a lemon peel for garnish
Ingredient Substitutions
You can totally mix up your added toppings for this cheesecake dip. You could fold in some chocolate chips or peanut butter chips, cookie dough bites or add a little bit of caramel sauce. With the caramel, you could make a caramel apple cheesecake dip. Instead of strawberries, you could use a can of cherry pie filling or homemade cherry pie filling to make a no bake cherry cheesecake dip.
If you don’t have mascarpone, you could also use cool whip and marshmallow fluff, or make whipped cream by combining powdered sugar and heavy cream with a mixer on medium speed until it reaches stiff peaks. If you don’t want it to sweet and like some extra tanginess, you could also substitute sour cream or Greek yogurt. You won’t get the same texture as cheesecake, but it will have a perfect light flavor.
Feel free to add any flavors you love to mix it up. A dash of vanilla extract or some cinnamon would be delicious. You could also split the powdered sugar amount and add some brown sugar. For a bit of crunch on top, add graham cracker crumbs.

How to make
Step 1: Prepare Strawberries
Mix warm water and cornstarch until combined. Add cornstarch mixture to a small sauce pan with the strawberries and granulated sugar (Image 1).
Stir and bring mixture to a simmer. Simmer 5 minutes stirring constantly and smashing the strawberries down a little (Image 2). Remove from heat and set aside to cool.

Step 2: Blend Cheese Mixture
Using an electric mixer on high speed, either a stand mixer with whisk attachment or an electric hand mixer, mix together softened cream cheese, mascarpone cheese, powdered sugar and lemon juice in a large bowl until evenly combined (Images 3 and 4).

Step 3: Assemble Dip
Spread cream cheese mixture into a shallow bowl or serving dish (Image 5) and top with the cooled strawberry mixture and lemon zest (Image 6).
You can serve at room temperature with cookies or fresh apple slices for dipping. If you want, you could serve it in small ramekins to make mini cheesecakes. Enjoy!

Storage and Freezing
Store cheesecake dip in the fridge in an airtight container or cover with plastic wrap and put in the fridge for up to four days. This dip is delicious the next day.
