This Puff Pastry Pizza is the perfect weeknight dinner or simple appetizer. It is so easy to make and something the whole family will enjoy.

Serving suggestions

I love this puff pastry pizza with a quick and easy salad or side like a lemon kale caesar or air fryer asparagus. For a more high protein option, you could make this white bean grinder salad to go with it.

Ingredients and Ingredient Substitutions

  • Frozen puff pastry – I use store bought, but you can also make your own
  • Goat cheese – I love the tanginess of goat cheese, but you can use another creamy cheese you love
  • Heavy cream – a touch of heavy cream gives the cheese the perfect texture
  • Grated garlic – the garlic adds a ton of flavor to your pizza
  • Medium tomatoes – use your favorite tomatoes to make your puff pastry pizza
  • Salt and pepper – you could also add red pepper flakes for a bit of heat
  • Fresh basil and fresh parmesan cheese – use basil and parmesan to garnish your pizza

You can add any additional toppings you would like to customize your pizza. You could add some pepperoni or sausage, onion, peppers, whatever you enjoy!

How to make

Step 1: Defrost Pastry and Prep Ingredients

Remove the sheet of puff pastry from the freezer and set out until it comes to about room temperature. Preheat oven to 400F and line a baking sheet with parchment paper.

Mix goat cheese, heavy cream and grated garlic together until a smooth mixture remains. Cut tomatoes into thin slices.

Step 2: Assemble Pizza

Roll puff pastry sheet into a 12”x14” rectangle and place on the lined baking sheet. Puncture sheet of puff pastry all over with a fork. 

Spread goat cheese mixture over the puff pastry and layer on the sliced tomatoes in an even layer. Season the tomatoes with salt and pepper.

Step 3: Bake and Enjoy

Place in the oven and bake at 400F for 18-20 minutes.

Grate fresh parmesan cheese over top and garnish with fresh basil. Allow to cool slightly before cutting into 9 slices and serving.

Storage and Reheating

Store leftovers in an airtight container in the fridge for up to 4 days. To reheat, put the puff pastry pizza in a toaster oven until warm, or enjoy cold.

Ingredients

  • 1 sheet frozen puff pastry
  • 4 oz creamy goat cheese
  • 2 tbsp heavy cream
  • 1 tsp grated garlic
  • 2 medium tomatoes
  • Salt and pepper
  • Fresh basil and fresh parmesan cheese for garnish

  • Remove the sheet of puff pastry from the freezer and set out until it comes to about room temperature – 20 to 40 minutes depending on how warm your kitchen is. Preheat oven to 400F and line a baking sheet with parchment paper.
  • Mix goat cheese, heavy cream and grated garlic together until a smooth mixture remains. Cut tomatoes into thin slices – about ⅛” thick.
  • Roll puff pastry sheet into a 12”x14” rectangle and place on the lined baking sheet. Puncture sheet of puff pastry all over with a fork.
  • Spread goat cheese mixture over the puff pastry and layer on the sliced tomatoes in an even layer. Season the tomatoes with salt and pepper.
  • Place in the oven and bake at 400F for 18-20 minutes.
  • Grate fresh parmesan cheese over top and garnish with fresh basil. Allow to cool slightly before cutting into 9 slices and serving.
