I’ve been making Greek yogurt bowls for breakfast on repeat lately, and I love to pair it with my coffee. In the summer, I love to make this cold brew or an iced shaken espresso to go with it.

Ingredients and Substitutions
- Avocado oil – I used avocado oil because it’s a neutral oil, so you could also use light olive oil instead
- Maple syrup – I love the maple flavor in this granola, but you could use honey to sweeten your protein granola instead
- Vanilla extract – add a little vanilla for the perfect flavor
- Rolled oats – make sure to use rolled oats for your granola for the perfect results when baking
- Vanilla protein powder – I love using vanilla, but you could experiment with other protein powder flavors as well
- Kosher salt – the salt will enhance all the flavors in your granola
- Cinnamon – a dash of cinnamon is the best in this protein granola recipe
- Mini chocolate chips – add the chocolate chips at the end so they melt slightly but don’t fully melt
Feel free to add any additional toppings you would like! Dried fruit like raisins or apricot would be delicious in this granola mixture.

How to make
Step 1: Mix Wet and Dry Ingredients
Preheat oven to 350F and line a baking sheet with parchment paper.
Mix avocado oil, maple syrup, and vanilla extract in a small bowl. In a large mixing bowl mix together rolled oats, protein powder, kosher salt, and ground cinnamon.
Step 2: Combine and bake
Pour liquid mixture into the large mixing bowl and toss until everything is fully coated.
Spread into an even layer on the baking sheet and bake at 350F for 15-17 minutes or until the edges are golden brown.
While the granola is warm, spread the chocolate chips over top so they melt into the granola. Allow to cool completely before breaking into crumbles.

Storage
Once the granola is cooled and broken into pieces, place it in an airtight container on the counter for up to a week, or place in the fridge to make it last longer.

Ingredients
- 3 tbsp avocado oil
- 1/4 cup maple syrup
- 1 tsp vanilla extract
- 2 cups rolled oats
- 2 servings vanilla protein powder 34g in weight, 40g of protein
- 1 tsp kosher salt
- 1 tsp ground cinnamon
- 1/4 cup mini chocolate chips optional
Instructions
- Preheat oven to 350F and line a baking sheet with parchment paper.
- Mix 3 tbsp avocado oil, 1/4 cup maple syrup, and 1 tsp vanilla extract in a small bowl.
