Paleo Breakfast Meal Prep

For the first time in YEARS I am back in the habit of going to the gym at least 4 times a week. This past summer I experienced the worst workout slump of my life and by August I knew it was time for a change. I decided to start weight training and I am in LOVE with the feeling. I love how challenging the workouts are and how I feel after them, but most of all I love how quickly I have been able to see progress. During my running or cardio bunny days it was so hard to see consistent progress. I would work my way up to a certain mileage and then eventually just crap out or get injured. With weight training, I can actually see myself getting stronger day to day and that is a really cool feeling.

Since I am working out hard and trying to put on muscle, I am also trying to be sure that my body is properly fueled for the task. I tend to opt for intermittent fasting over eating breakfast during the work week, but with my new workout schedule I am finding some morning fuel is beneficial. I usually prep just some hard boiled egg for the week on Sundays, but I have decided to take it up a notch this week with a full meal.

For this breakfast meal prep I've got the trifecta of fats, proteins, and good carbs when I combine the eggs, bacon and sweet potatoes. This year I have fallen in love with jammy eggs and I cannot go back to a standard hard boiled. Follow the steps in this article to get a perfect jammy egg every time.

After everything was cooked I packed them into these small meal prep containers that I got and that are perfect for breakfast or snacks. Now I will have breakfast each weekday this week. I will probably just eat them cold and maybe with a little sriracha, but you could easily reheat these in the microwave.

Paleo Breakfast Meal Prep

prep time: 10 minscook time: 40 minstotal time: 50 mins

ingredients:

  • 10 eggs
  • 1 large sweet potato
  • 1/2 a medium red onion
  • 5 strips of bacon
  • 1 tsp avocado oil  (the one I used)

instructions:

  1. Fry bacon in  a large frying pan over medium-low heat turning frequently
  2. While bacon is frying hard boil eggs. Place 3 inches of water in a sauce pan and bring to a boil. Slowly lower eggs into  the pot. Cover and set timer for 7 minutes. Immediately place in ice bath when timer goes off.
  3. While eggs and bacon are cooking, dice the red onion and cube the sweet potato into 1/2 inch cubes
  4. Remove cooked bacon from pan and heat red onion in bacon grease over medium low heat. Cook onions until soft and fragrant 3-5 minutes.
  5. Remove onions from pan and add 1 tsp of avocado oil. Add chopped sweet potato to the pan, sprinkle with salt and cook over medium heat for 20 minutes tossing frequently.
  6. When sweet potatoes are fully cooked and crisping on the outside add red onions and chopped bacon back into the pan. Allow to cook and combine for 3 minutes.
  7. Fill each of 5 small containers with 1/5 of the sweet potato hash and 2 peeled eggs. Do not slice the egg open until the day  you are eating. (these mini containers are perfect for breakfast or snacks)
  8. Enjoy the breakfast cold (thats what I do) or microwave for 30 seconds to reheat and enjoy!
