How to make Mozzarella Stuffed Chicken Meatballs

Step 1: Prepare mozzarella stuffed meatballs

To begin, preheat oven to 350F. Add ground chicken, egg, almond flour, salt, pepper, oregano, garlic powder, and crushed red pepper to a mixing bowl.

Then, mix to combine thoroughly with a spoon or your hands. With wet hands, roll out 8 meatballs using about 2 tbsp of mixture for each meatball.

Place meatballs on a tray and cut part skim mozzarella into cubes. Stuff each meatball with a piece of mozzarella.

Step 2: Brown stuffed meatballs and bake

Then, heat oil in a cast iron skillet. Place the meatballs in the skillet and cook for about 8 minutes until the meatballs are browned on all sides.

Place cast iron skillet in the oven to bake at 350 for 13 minutes.

Step 3: Add sauce, heat, and serve

Finally, take the meatballs out of the oven and pour the sauce into the cast iron. Heat the sauce and meatballs over medium-low heat until the sauce is warmed through.

Serve meatballs with fresh parmesan cheese on pasta.

I love this recipe! I’ve made it twice now. These are the most filling meatballs I’ve ever had, and they make for some great leftovers. I made them with ground turkey the second time through, and they were still perfect. I’d give it more than 5 stars if I could.

This recipe is amazing! I used panko since I don’t have almond flour on hand and they still turned out perfect. I was a little worried about the texture since I don’t work with ground chicken very often, but these were super easy and delicious. Will definitely be making them again.

Does the nutritional facts include the pasta or is it just for the meatballs?

These are so good. I make a big batch at least once a month. I leave the cheese out and freeze them because they reheat so well and they go in everything! I’ve put them in spaghetti sauce, soups, on top of salad, in ramen, and even used them for teriyaki style meatballs with stir fry. Can’t recommend them enough!
