  • Ground sweet Italian Sausage: seasoned Italian sausage might sound weird mixed with rotel, but it works perfectly for this dip! If you prefer something spicier you can use hot italian sausage or even chorizo.
  • Rotel: Rotel is just diced tomatoes mixed with some diced green chilies. If you can’t find rotel, use 6oz of diced tomatoes in liquid and 4oz can of diced green chilies.
  • Cream Cheese: one 8oz block of cream cheese is the perfect amount for this recipe. For the best texture, I recommend using regular cream cheese and not low fat cream cheese.
  • Shredded cheddar cheese: the dip is very creamy and cheesy with the cream cheese but we add shredded cheddar cheese on top to give it an extra bubbly and cheesy topping.

Step 1: Brown sauasge and break into crumbles. Mix can of rotel in with the sausage and place a brick of cream cheese in the middle.

Step 2: Allow the cream cheese to melt then mix it in with the sausage and rotel. Pour shredded cheddar on top and place in the oven.

Step 3: Bake at 350F for 15 minutes. Top with chives and serve warm.

Mad’s Expert Tips for the Best Cheesy Sausage and Rotel Dip 🧀

  • Let the sausage cook until browned – little browned bits on the sausage and on the bottom of the skillet add an extra boost of flavor to this dish.
  • Use full fat cream cheese – for the best taste and texture, use full fat cream cheese instead of low fat cream cheese. If you want a higher protein substitution, use 8oz blended cottage cheese instead of cream cheese.
  • Broil at the end for a crispy top – if you want a slightly crispy, bubbling cheese top, place the dip under the broiler at the very end for just 2-3 minutes.

Is rotel dip better with sausage or ground beef?

I prefer to make the rotel dip with italian sausage or even breakfast sausage because it is seasoned and adds lots of extra flavor to the dip. You can certainly use a ground meat like ground beef or ground pork, but add some seasonings to it while browning.

Is velveeta or cream cheese better for rotel dip?

You can use either cubed velveeta or a brick of cream cheese for the cheesy base of this dip. I prefer the taste of cream cheese because the velveeta can be a bit too salty.

Easy Sausage Rotel Dip

A delicious cheesy dip made with just Italian sausage, rotel, cream cheese and shredded cheddar cheese

Ingredients

  • 1 lb ground sweet italian sausage
  • 1 can rotel 10oz
  • 8 oz cream cheese
  • 1 cup shredded cheddar cheese

Instructions

  • Preheat oven to 350F.
  • Place an oven safe skillet like a cast iron skillet on the stove over medium heat. Add the sausage to the skillet. Cook sauasge and break into crumbles.
  • Once the sausage is browned and crumbled, reduce heat to low and pour the entire contents of the can of rotel into the skillet. Mix with the sausage.
  • Place the cream cheese into the middle of the skillet and allow it to melt a little before mixing in with the sausage and rotel.
  • Top the skillet with the shredded cheese and place in the oven to cook uncovered at 350F for 15 minutes.
  • Serve warm with tortilla chips or fresh veggies for dipping.

Recipe Notes

  • Allow the sausage to cook until there are little browned bits on the crumbles. The browning adds more flavor to the dip
  • If you can’t find rotel, use 6oz of diced tomatoes in liquid and 4oz can of diced green chilies.
  • Swap the cream cheese for blended cottage cheese to make a higher protein dip
  • Adjust the spice level of this dip by changing the type of rotel you buy. Mild rotel will be less spicy than original and hot will be spicier than original
