- Sweet mini peppers – I love using mini peppers but you can also cut regular peppers into strips
- Yellow onion – the onion adds a ton of flavor to your chicken and peppers
- Whole peeled plum tomatoes – use a jar of tomatoes to keep this recipe simple
- Boneless skinless chicken thighs – I opted for chicken thighs, but you can also use chicken breasts
- Garlic – grate or mince your garlic finely to get it to the perfect texture
- Balsamic vinegar – the balsamic deepens the flavor of your sauce
- Kosher salt and Italian seasoning – this simple spice blend brings all the flavors together together
- Fresh basil and fresh parmesan cheese – garnish with your favorite toppings
For a more Mexican inspired spin on this recipe, you could switch out your seasonings and add some taco seasoning.
I used chicken thighs, but you could also substitute another protein like pork or beef.

How to make
Step 1: combine ingredients
Place cooked sliced mini peppers, sliced yellow onion, whole peeled tomatoes and liquid from the can, chicken thighs, grated garlic, balsamic vinegar, salt, and italian seasoning into a slow cooker. Stir to combine ingredients.
Set to cook on low for 4-6 hours or high for 2-3 hours. Stir occasionally using your spoon to crush the whole tomatoes as you stir.
Step 2: Cook and enjoy
Ensure that the chicken has reached at least an internal temperature of 165F before serving.
Serve over rice or cooked pasta. Garnish with parmesan cheese and fresh basil.

Storage and Reheating
Store leftovers in an airtight container in the fridge for up to 4 days. To reheat, put the chicken and peppers in the microwave or in a sauté pan on the stove until warmed through.

- 2 lb boneless skinless chicken thighs

- 2 tsp kosher salt
- 2 tsp italian seasoning
- Fresh basil and fresh parmesan cheese
