I love serving this creamy sausage potato soup recipe with some delicious bread for dipping. Overnight bread or this focaccia would be delicious.
I find this soup filling on it’s own, but if you want to add another side, you could make this fall harvest salad or a kale cranberry quinoa salad.
For a fall dessert to go with it, make some pumpkin blondies or pumpkin bars.

Ingredients
- Italian chicken sausage – you can use mild or hot sausage, whatever you prefer
- Olive oil – I used extra virgin olive oil, but you can also use a neutral oil or butter instead
- Russet potatoes – peel and cube your potatoes into the perfect bite size for your soup
- Yellow onion, celery, and carrot – this combination of vegetables is the classic base of any delicious soup
- Salt – the salt enhances the flavors of the vegetables
- Dried oregano and dried basil – these herbs add so much flavor to your soup
- Tomato paste – tomato paste incorporates an acidity and depth of flavor to your soup
- Chicken broth – you can use store bought stock or make your own
- Water – use water to supplement the broth liquid in your soup
- Heavy cream – the heavy cream adds the perfect amount of creaminess to your soup
Ingredient Substitutions
I love using chicken sausage, but you could also use pork sausage or turkey sausage instead. Italian sausage is my favorite, but feel free to use another flavor.
For some more aromatics, add a couple of cloves garlic with your vegetables. If you would like some added heat, sprinkle some red pepper flakes on top. If you want any additional seasoning, add a half teaspoon of garlic powder and onion powder.
I think heavy cream is so delicious, but you could substitute half and half, or your favorite milk. It will make the soup just a bit less creamy and thin out the texture a bit.
If you want to make this potato sausage soup even creamier, you could add some cheddar cheese or a dollop of sour cream. If you like a thicker consistency, add a little bit of flour after you add the vegetables to the pot. This will cook the flour and slightly thicken the soup.
You could also try making this recipe in the crockpot! Put all ingredients in a slow cooker except for the cream. Cook on low for 4-6 hours, then add the cream at the end.

How to make
Step 1: Brown the Sausage and Vegetables
Cut sausage links into rounds. Heat oil in pot over medium-high heat. Add sausage to the pot to brown for 5-7 minutes tossing frequently (Image 1).
Remove sausage from pot with a slotted spoon to drain the fat and leave it in the pan. Add onion, celery and carrot – add more oil if needed. Saute veggies for about 5 minutes over medium heat (Image 2). Add salt, oregano and basil and saute for another minute.

Step 2: Add Tomato Paste, Broth, Potatoes and Sausage
Mix the tomato paste in with the veggies (Image 3). Then, mix in the chicken broth (Image 4), water, potatoes and browned sausage. Bring the soup to a boil.
Reduce heat to a simmer, cover and simmer for about 30 minutes – potatoes should be tender (Image 5).

Step 2: Simmer and add cream
Take ½ cup of broth out of the soup pot and slowly whisk with the heavy cream – this prevents curdling. Pour this mixture back into the pot and stir (Image 6). Taste and season with salt and pepper as needed.
Top with a bit of parmesan cheese. Serve and enjoy!

Storage, reheating and Freezing
Store leftovers in an airtight container in the fridge for up to 5 days. To reheat, put the sausage and potato soup in the microwave or on the stovetop until warmed through.
To freeze, place in a freezer safe container and freeze for up to three months. Thaw in the fridge and heat on the stove.
