This Chicken Orzo Bake is the easiest weeknight meal. Just throw everything into a casserole dish, bake and stir for a flavorful dinner that the whole family will love.

Serving suggestions

This chicken orzo bake recipe is great on its own, but you can serve it with more greens if you would like. I love to make a lemon kale caesar or a quick mixed greens salad with mason jar dressing.

For a quick and easy dessert, you could make chocolate dip for fruit.

Ingredients and Ingredient Substitutions

  • Chicken breasts – boneless skinless chicken breasts are best but you could also use boneless skinless chicken thighs
  • Extra virgin olive oil – you can substitute any neutral oil
  • Kosher salt, garlic powder, onion powder, black pepper – feel free to add any additional spices or dried herbs you enjoy
  • Cherry tomatoes – the cherry tomatoes will burst in the dish to create the perfect flavor
  • Dry orzo pasta – use your favorite boxed orzo pasta
  • Chicken broth – I like to use chicken broth because it adds a ton of flavor to the dish
  • Brick of feta – use your favorite feta for this recipe to create the creamy texture

If you would like to include some greens to the dish, you could add some spinach into the casserole dish. For some heat, add red pepper flakes to taste.

How to make

Step 1: Season Chicken and Add Orzo

Preheat oven to 400F. Cut chicken breasts into bite size pieces and place in a 9Γ—13 casserole dish.

Pour olive oil into the casserole dish and toss to coat the chicken. Add spice blend in the dish and toss to coat the chicken (Image 1). Pour the orzo, cherry tomatoes and chicken broth into the dish and stir (Image 2). Make sure the orzo is immersed in the broth.

Step 2: Add Feta

Place the brick of feta into the middle of the casserole dish (Image 3 and 4). Cover the casserole dish with aluminum foil.

Place in the oven and bake covered at 400F for 45-50 minutes. Check the chicken for an internal temperature of at least 165F (Image 5).

Step 2: Bake and Enjoy

Stir everything together and press down on the cherry tomatoes so that they burst and create a sauce with the melted feta cheese (Image 6).

Serve with fresh basil and fresh cracked black pepper.

Storage, reheating and Freezing

Store leftovers in an airtight container in the fridge for up to 5 days. To reheat, put the chicken orzo bake in the microwave or oven until warmed through.

To freeze, place in a freezer safe container before freezing and cover tightly. Bake directly from frozen covered at 325F for a half hour to an hour.

Ingredients

  • 2 boneless skinless chicken breasts
  • 1 tbsp extra virgin olive oil
  • 1 tsp kosher salt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ΒΌ tsp black pepper
  • 12 oz cherry tomatoes
  • 1 cup dry orzo pasta
  • 2 cups chicken broth
  • 6 oz brick of feta

Instructions

  • Preheat oven to 400F.
  • Cut chicken breasts into bite size pieces and place in a 9Γ—13 casserole dish.
  • Pour olive oil into the casserole dish and toss to coat the chicken. Pour salt, garlic powder, onion powder and pepper into the casserole dish and toss to coat the chicken.
  • Pour the orzo, cherry tomatoes and chicken broth into the casserole dish. Stir until everything is evenly mixed together. Make sure the orzo is immersed in the broth.
  • Place the brick of feta into the middle of the casserole dish. Cover the casserole dish with aluminum foil.
  • Place in the oven and bake covered at 400F for 45-50 minutes. Check the chicken for an internal temperature of at least 165F.
  • Stir everything together and press down on the cherry tomatoes so that they burst and create a sauce with the melted feta cheese.
  • Whenever the tomatoes are burst and everything is mixed together, serve with fresh basil and fresh cracked black pepper.

      As long as they are sliced in thinner strips, you can add them in and they will cook with the rest of the dish.
