  • Ripe bananas – the riper the better! I use almost overripe bananas.. This is my favorite way to use up those bananas that are a bit too ripe to eat.
  • Large eggs – the eggs will bind all of the ingredients together in the banana bread and help give the loaf lift.
  • Vegetable oil – you can use any neutral oil. I used avocado oil in my bread, but you can use refined coconut oil, canola oil or any other vegetable oil.
  • Vanilla cake mix – use your favorite brand of cake mix to make this recipe. Betty Crocker works great but you can use any brand you like.

Ingredient Substitutions

For this easy banana bread recipe, you can use any type of cake mix. I prefer vanilla cake mix, but you can use white cake mix, yellow cake mix, spice cake mix, or even a butter pecan cake mix could be great options.

For a chocolate version, just use a chocolate cake mix. If you need it gluten free, use a gluten-free cake mix.

Once all of your ingredients are mixed together, you can add mix ins too. Chocolate chips, white chocolate chips or a nut like chopped walnuts, almonds or pecans would be delicious.

For some extra vanilla flavor, add a dash of vanilla extract to your cake mix recipe.

How to make Cake Mix Banana Bread

Step 1: Mash 3 ripe bananas in a large mixing bowl.

Step 3: Pour cake mix into the bowl and fold the cake mix into the wet ingredients.

Step 4: Pour batter into a lined loaf pan and bake in the oven at 375F

To make cake mix banana muffins, pour the batter into a 12 slot muffin tin instead of the loaf pan. Bake at 350F for 25 minutes. Insert a toothpick into the center of the banana muffins to ensure doneness before removing from the oven.

Ingredients

  • 3 bananas ripe
  • 3 eggs
  • ⅓ cup vegetable oil I used avocado oil
  • 1 box vanilla cake mix (13.25 oz)

Instructions

  • Preheat oven to 375F and line a loaf pan with parchment paper.
  • Mash bananas in a large mixing bowl and whisk in eggs and vegetable oil. Pour cake mix into the bowl and fold in with a flat spatula.
  • Pour batter into prepared loaf pan and place in the oven.
  • Bake at 375F for 50 minutes. Allow to cool completely before cutting into slices.
  • Store in the refrigerator for up to one week or freeze for up to 3 months.
