Ingredients You’ll Need

- Ripe bananas – the riper the better! I use almost overripe bananas.. This is my favorite way to use up those bananas that are a bit too ripe to eat.
- Large eggs – the eggs will bind all of the ingredients together in the banana bread and help give the loaf lift.
- Vegetable oil – you can use any neutral oil. I used avocado oil in my bread, but you can use refined coconut oil, canola oil or any other vegetable oil.
- Vanilla cake mix – use your favorite brand of cake mix to make this recipe. Betty Crocker works great but you can use any brand you like.
Ingredient Substitutions
For this easy banana bread recipe, you can use any type of cake mix. I prefer vanilla cake mix, but you can use white cake mix, yellow cake mix, spice cake mix, or even a butter pecan cake mix could be great options.
For a chocolate version, just use a chocolate cake mix. If you need it gluten free, use a gluten-free cake mix.
Once all of your ingredients are mixed together, you can add mix ins too. Chocolate chips, white chocolate chips or a nut like chopped walnuts, almonds or pecans would be delicious.
For some extra vanilla flavor, add a dash of vanilla extract to your cake mix recipe.
