Serving suggestions

This banana bread is a delicious treat on its own with a bit of butter or peanut butter on top. If you want to serve along with coffee, I love making an iced shaken espresso and adding some syrup like sugar cookie syrup or caramel brulee syrup.

For a brunch spread, I love serving this cake mix banana bread recipe alongside a cottage cheese egg bake and oven bacon for the perfect mix of satiating and sweet.

Ingredients

  • Ripe bananas – the riper the better! This is my favorite way to use up those bananas that are a bit too ripe to eat.
  • Large eggs – the eggs will bind everything together in your banana bread
  • Vegetable oil – you can use any neutral oil. I used avocado oil in my bread
  • Vanilla cake mix – use your favorite brand of cake mix to make this recipe. Betty Crocker works great but you can use any brand

Ingredient Substitutions

For this banana bread recipe with cake mix, you could substitute other flavors of cake. White cake mix, yellow cake mix, spice cake mix, or butter pecan cake mix could be great options. For a chocolate version, just use a chocolate cake mix. If you need it gluten free, use a gluten-free cake mix.

Once all of your ingredients are mixed together, you can add mix ins too. Chocolate chips, white chocolate chips or a nut like chopped walnuts, almonds or pecans would be delicious.

For some extra vanilla flavor, add a dash of vanilla extract to your cake mix recipe.

How to make

Step 1: Mash Bananas and Mix Wet Ingredients

Preheat oven to 375F and line a loaf pan with parchment paper or spray it with nonstick cooking spray.

Mash bananas in a large bowl (Image 1) and whisk in eggs and vegetable oil (Image 2). You can also use an electric mixer.

Step 2: Fold In Dry Ingredients

Once the wet ingredients are well combined (Image 3), pour cake mix into the bowl and fold in with a flat spatula (Image 4). Pour batter into prepared loaf pan and place in the oven (Image 5).

Step 3: Bake and Cool

Bake at 375F for 50 minutes (Image 6).

Allow to cool completely before removing from the pan and transferring to a wire rack. Then cut into slices using a serrated knife for easier slicing.

Make it into muffins

Pour the batter into a 12 slot muffin tin instead of the loaf pan. Bake at 350F for 30 minutes. Insert a toothpick into the center of the banana muffins to ensure doneness before removing from the oven.

Storage, reheating and Freezing

Allow the baked banana bread to cool completely on a cooling rack. Place the cool bread in an airtight container or wrap in plastic wrap and store in the refrigerator for up to 5 days. You can cut into slices or leave whole prior to placing in the fridge.

If you want to eat warm, reheat in the toaster oven or on the stove top until warmed through and crispy on the edge. Top with a pat of butter.

Freeze the loaf whole or in slices. Freeze for up to 3 months. Wrap the banana bread in aluminum foil before placing in the freezer. Defrost slices or whole loaf in the fridge or on the counter at room temperature.

  • 3 bananas ripe
  • 3 eggs
  • ⅓ cup vegetable oil I used avocado oil
  • 1 box vanilla cake mix (13.25 oz)

  • Preheat oven to 375F and line a loaf pan with parchment paper.
  • Mash bananas in a large mixing bowl and whisk in eggs and vegetable oil. Pour cake mix into the bowl and fold in with a flat spatula.
  • Pour batter into prepared loaf pan and place in the oven.
  • Bake at 375F for 50 minutes. Allow to cool completely before cutting into slices.
  • Store in the refrigerator for up to one week or freeze for up to 3 months.

Recipe Notes

  • You can use any flavor of boxed cake mix in place of the vanilla cake mix
  • It is important to use ripe bananas for the correct taste
