Step 1: Saute the onion and ground turkey in oil. Cook the meat and break up into small crumbles until browned and then season.

Step 2: While the turkey cooks, scramble 12 eggs with the whole milk in a large bowl.

Step 3: Add chopped tomatoes to the pan with the turkey and onions and then pour in into a greased casserole dish.

Step 4: Pour the egg and milk mixture into the casserole dish and stir everything together. Top with crumbled goat cheese. I like to also add some thinly sliced tomatoes on top.

Step 5: Bake in the oven at 350F for 45 minutes. Remove from the oven and allow to cool. I like to cut into servings before storing in the fridge.

  • Don’t overcook your ground turkey – when you saute your turkey, be careful not to overcook it in the pan. It will continue to cook in the oven, so you don’t need to finish cooking when sauteing.
  • Drain your tomatoes as necessary – if you are using more juicy tomatoes, make sure to drain some of the liquid to avoid getting a watery texture for your casserole.
  • If you substitute ground pork or sausage, drain some of the fat – Since ground turkey is more lean, it doesn’t produce as much fat in the pan that could get into the casserole. If you substitute a fattier meat, make sure to keep the grease out of your casserole.

Turkey Sausage, Tomato and Goat Cheese Breakfast Casserole

This easy breakfast casserole recipe is made with simple and healthy ingredients like ground turkey, tomatoes, onions, goat cheese and whole eggs.

Ingredients

  • 1 tbsp oil
  • 1 yellow onion diced
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1/4 tsp pepper
  • 16 oz ground turkey
  • 12 eggs
  • 1 cup whole milk
  • 1 cup fresh chopped tomatoes + more for topping
  • 1/2 cup crumbled goat cheese

Instructions

  • Preheat oven to 350F and grease a 9×13 casserole dish with spray oil
  • Heat the oil in a frying pan over medium-low heat and add the onion. Saute the onion until soft and fragrant – about 4 minutes.
  • Increase the heat to medium and add the ground turkey to the pan
  • Cook the ground turkey and break up into small crumbles until browned – about 6 minutes Add salt, pepper and garlic powder to the turkey and onions and saute for another minute
  • While the turkey cooks, scramble 12 eggs with the milk.
  • Add chopped tomatoes to the pan with the turkey and onions and cook for 2 more minutes. Remove the pan from the heat and pour the turkey and tomato mixture into the casserole dish.
  • Pour the egg and milk mixture into the casserole dish and stir. Sprinkle crumbled goat cheese over top and stir in gently. If desired, add thinly sliced tomato on the top of the casserole
  • Bake in the oven at 350F for 45 minutes 
  • Remove from the oven and allow to cool before slicing into squares

    Delicious casserole! I made this on Sunday for a fast, high protein breakfast during the week. It reheats so well and doesn’t even need hot sauce or ketchup on top. I used ground chicken instead of turkey and will definitely make again!
