These egg white wraps are great on their own because they are packed with protein and vegetables to start the day. If you want to pair it with a little sweet treat, I love these peanut butter and jelly muffins or these mini chocolate chip banana muffins.
For a little extra fiber, I like to have this wrap with a handful of berries. It keeps me full all morning!

Ingredients and Ingredient Substitutions
- Liquid egg whites – the egg whites are perfect to keep this recipe quick and easy. If you prefer, you can do a mix of egg whites and whole eggs just whisk them before baking.
- Kosher salt and black pepper – use a little bit of salt and pepper to season your egg whites. If you like you can add extra seasonings like garlic powder, onion powder and dried oregano.
- Olive oil – I use olive oil to saute the spinach but you can use any neutral oil.
- Chopped spinach – You can use fresh or frozen spinach. If you use frozen, make sure you defrost and drain the liquid before cooking.
- Sun dried tomatoes – I love the flavor of sun dried tomatoes in this wrap, but you could also blister your own tomatoes for your wrap. I prefer to use the tomatoes packed without oil, but if you can only find sun dried tomatoes in oil you can use the excess oil to saute the spinach.
- Red pepper flakes – you can adjust the amount of red pepper flakes depending on how much spice you like or omit it completely.
- Feta cheese – the feta cheese pairs perfectly with the spinach and tomatoes for this Greek inspired wrap. If you don’t like feta, crumbled goat cheese also works really nicely with these flavors.
- Whole wheat lavash wraps – I love to use the lavash wraps for this recipe, but you can also substitute your favorite whole wheat wrap

How to make
Step 1: Cook Egg Whites and Vegetables
Preheat oven and grease a baking pan or line with parchment paper. Pour liquid egg whites into the pan and season with salt and pepper. Bake at 350F for 15 minutes.
Heat olive oil in a frying pan over medium-low heat. Add the spinach to the pan and saute until mostly wilted. Add sun dried tomatoes, some salt, and crushed red pepper flakes to the pan and toss to combine.
Remove the pan from heat and dab out any excess liquid that came out of the spinach.
Step 2: Assemble the wraps
Cut cooked egg whites into 6 rectangles. Assemble wraps placing the egg rectangle at the top center of the wrap with the spinach tomato mixture and crumbled feta inside.
Fold up with the right side over the center, then fold the bottom up, then fold over the other side.
Warm the wrap in a pan over medium heat to seal the seam and crisp the other side.

Storage and Reheating
Allow to cool completely before wrapping up to store in the fridge for up to 5 days. Reheat in the microwave for 1 min 30 secs and crisp in the air fryer at 375F for a couple mins OR bake in oven at 275F for about 10 minutes.

- 2 oz sun dried tomatoes julienne cut
- ½ tsp crushed red pepper flakes
- 6 oz feta cheese crumbled
- 6 whole wheat lavash wraps
