Make a simple, flavorful lunch with soba noodles!

I am always looking for simple lunch recipes that I can prepare ahead of time and pack for lunch. I used to LOVE a cold soba noodle salad from the dining hall at my university.

Just prepare a simple sesame ginger sauce. Then, combine soba noodles, chicken, and veggies in a mixing bowl. Pour the sauce into the bowl and enjoy the noodle dish hot or cold!

What ingredients will I need to make this healthy cold noodle dish?

You will be amazed at how easy it is to make this simple sesame soba noodle dish with basic ingredients. If you cannot find these exact ingredients, it is easy to swap out certain ones.

You can use any vegetables that you like. I think this soba noodle dish would be perfect with some red bell pepper. If you do not eat meat, you can use tofu or tempeh in place of the chicken.

  • Dried soba noodles
  • Boneless skinless chicken breast
  • Avocado oil
  • Salt & pepper
  • Shredded carrots
  • Cooked, shelled edamame
  • Green onion
  • Coconut aminos or soy sauce
  • Sesame oil
  • Rice vingear
  • Fresh grated ginger
  • Toasted sesame seeds

What are soba noodles? Are they gluten free?

Soba noodles are a Japanese noodles made from buckwheat flour and water. Frequently soba noodles are made with additional whole wheat flour to prevent the noodles from deteriorating

Despite the name, buckwheat flour is in fact free from wheat and gluten. If you buy soba noodles that are made only from buckwheat or other gluten free flours, then they are a gluten free noodle.

Let’s make some Sesame Soba Noodles and Chicken!

Step 1: Prepare soba noodles and chicken

To begin, prepare soba noodles according to package instructions in lightly salted water. Then, cut chicken breast into small bite size pieces and season with salt and pepper.

Next, heat avocado oil in a frying pan over medium-high heat. Add seasoned chicken to the pan and cook for 6 minutes – tossing frequently.

Then, remove chicken from heat and allow to cool. Drain and rinse cooked soba noodles.

Step 2: Mix ingredients and sauce

Next, add soba noodles to a large mixing bowl with carrots, edamame, green onion and cooked chicken. Then, in a small mixing bowl, whisk together coconut aminos (or soy sauce), sesame oil, rice vinegar and fresh ginger.

Step 3: Toss the soba noodles and chicken in the sesame sauce

Then, pour sauce over the soba noodles, chicken and veggies. Toss to coat the soba noodles and chicken with the sauce. Finally, garnish with sesame seeds.

Step 4: Enjoy hot or cold!

Should I eat these soba noodles hot or cold?

I personally prefer to have these noodles as a cold lunch option. They are the perfect meal prep item because you can prepare the batch ahead of time and enjoy them all week.

If you want to eat these sesame soba noodles warm, I recommend heating the sauce and pouring it over the warm soba noodles and chicken. You can also simply reheat these noodles in the microwave.

How long will this Sesame Soba Noodles and Chicken keep in the fridge?

Once prepared, store this simple noodle dish in an airtight container in the refrigerator. These noodles will be good in the refrigerator for up to 4 days.

Ingredients

  • 1 10oz pack of dried soba noodles
  • 2 boneless skinless chicken breasts
  • 1 tbsp avocado oil
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 cup shredded carrots
  • 1 cup cooked and shelled edamame
  • 1/4 cup sliced green onion
  • 1/4 cup coconut aminos or soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 2 tsp fresh grated ginger
  • 1 tbsp toasted sesame seeds

  • Prepare soba noodles according to package instructions in lightly salted water

    I was looking for something good to make with the soba noodles I hade in the pantry and this was a good find! Made this for lunch for week and it was truly enjoyable all week. Normally when I meal prep lunch I get sick of it by Wednesday… not this one will enjoy Thursday as much as Monday.
    This was an easy prep not a lot of effort to get it together.
    I did make 1 minor adjustment… I split the sesame oil 1/2 spicy sesame oil and 1/2 regular sesame oil.
    Loved it will make again and definitely try other recipes!

    I literally just finished making this recipe for lunches this week – I love it! I enjoy the different textures the ingredients provide.     I think the best part about this recipe is its simplicity- it makes it so easy to supplement ingredients if you don’t have something on hand (such is the case often in the middle of a pandemic). I used rice noodles instead & used steamed shrimp & it was still delicious. Keeps really well in the refrigerator for a quick lunch.

    Loved this recipe! Couldn’t find soba noodles so I modified with chow mein and swapped the edamame for broccoli – still delicious. Recipe is versatile and the sauce/dressing really makes it so yummy.
