This Roasted Beet and Lentil Chopped Salad is a hearty and satisfying meal that is as beautiful as it is delicious. Growing up my mom always made salads with roasted beets in the fall and I grew to love the color, flavor and texture they add to a chopped salad. I fed this to a friend who claims he hates beets and even he could not stop commenting on how delicious it is!

Sweet potatoes are roasted alongside the beets and then tossed with French lentils, lacinato kale, and crumbled feta in a simple white balsamic vinegar dressing. It is naturally vegetarian, packed with protein and fiber, and tastes even better the next day, so it is one of the best meal prep salads!

  • Beets – the beets are the perfect sweet vegetable as the base of the salad. They also add a great source of fiber to the salad.
  • French Lentils – I like using french lentils because they hold their shape in the salad after cooking.
  • Sweet potatoes – I love pairing beets with sweet potato for sweetness and texture that complement each other in the salad.
  • Lacinato kale – kale holds up really well as the salad sits, which makes it perfect for making the salad ahead of time
  • Goat cheese – goat cheese adds some tangy creaminess to the salad. You can also use feta or crumbled blue cheese instead
  • White balsamic vinegar – I used white balsamic in the dressing to make it a little lighter and brighter
  • Maple syrup – the syrup adds the sweetness to the dressing
  • Dijon mustard – the mustard provides a depth of flavor to balance out the dressing

What Are French Lentils?

 French lentils, also called Puy lentils, are small dark green-grey lentils that hold their shape after cooking and have a slightly firmer texture than regular green or brown lentils. This makes them perfect for salads because they do not get mushy. Look for them labeled as French or Puy lentils at most grocery stores.

How to make This Roasted Beet and Lentil Chopped Salad

Step 1: Prepare the lentils in a sauce pan and roast veggies on a sheet pan.

While the other ingredients cook, wash the kale, remove the stems and cut the leaves into thin shreds.

Step 2:  Prepare the dressing by blending all of the ingredients together in a standard blender or with an immersion blender.

Step 3: Pour the lentils, roasted beets and sweet potatoes, shredded kale, goat cheese and pistachios into a bowl. Toss to combine. Pour the dressing into the bowl and toss again.

Mad’s Expert Tips for the Best Roasted Beet and Lentil Chopped salad 🥗

  • Massage the kale – Do not skip this step! Massaging the kale with some of the dressing for a couple of minutes takes it from tough and bitter to tender and flavorful. It makes a huge difference.
  • Cook the lentils until just tender – Overcooked lentils will be mushy and fall apart in the salad. French lentils should be tender but still hold their shape.
  • Roast the beets and sweet potato in a single layer – Crowding the pan causes the vegetables to steam instead of roast. Give them space so the edges get nicely caramelized and roasted.
  • The salad gets better as it sits – The lentils soak up the dressing and the flavors deepen as it sits. I like to make it ahead of time and let it chill in the fridge.

Recipe FAQs

Can I use regular green or brown lentils instead of French lentils?

Yes, but they will be softer and more likely to get mushy in the salad. French lentils hold their shape much better. If you use regular lentils, cook them carefully and check them early so they do not overcook.

Can I use pre-cooked or canned beets?

Yes! Pre-cooked vacuum-packed beets are a great shortcut. Just cube them and skip the roasting step for the beets. You can still roast the sweet potatoes.

Can I make this salad vegan?

Yes! Simply leave out the goat cheese or swap it for a plant-based feta alternative. The rest of the recipe is naturally vegan.

Storage

Store in an airtight container in the fridge for up to 4 days. If you want to prepare for meal prep and you want to keep the lettuce crisp, separate the salad into individual servings and store the dressing on the side.

Roasted Beet and Lentil Chopped Salad with Sweet Potato and Kale

Ingredients

For the Salad

  • 1 cup french lentils
  • 4 medium beets – peeled and cut into bite sized cubes about 2 cups once cubed
  • 1 large sweet potato – peeled and cut into bite sized cubes about 2 cups once cubed
  • Spray oil and salt
  • 5 oz lacinato kale leaves
  • ½ cup crumbled goat cheese
  • ⅓ cup chopped roasted and salted pistachios

For the Dressing

  • 3 tbsp extra virgin olive oil
  • 2 tbsp white balsamic vinegar
  • 2 tbsp maple syrup
  • 1 tbsp dijon mustard
  • ½ tsp kosher salt
  • ¼ tsp black pepper

Instructions

  • Preheat oven to 400F and line a baking sheet with parchment paper. While the oven preheats, pour 4 cups water into a sauce pan with 1 cup rinsed lentils. Bring the water to a boil, reduce to a light simmer and simmer covered for 30-35 minutes – lentils should be tender and can be drained and set aside once cooked.
  • Place beets and sweet potatoes on the baking sheet, spray with cooking oil and season generously with salt. Roast at 400F for 25-30 minutes.
  • While the other ingredients cook, wash the kale, remove the stems and cut the leaves into thin shreds. Prepare the dressing by blending all of the ingredients together in a standard blender or with an immersion blender.
  • Pour the lentils, roasted beets and sweet potatoes, shredded kale, goat cheese and pistachios into a bowl. Toss to combine. Pour the dressing into the bowl and toss again. Serve immediately slightly warm or place in the refrigerator to chill for a few hours and serve chilled.

Recipe Notes

  • Make sure to massage your kale to break down its fibers and make it more tender to eat.
  • Cook the lentils until just tender so they do not get mushy and fall apart in the salad. 
  • Roast the vegetables in a single layer. This makes sure they get crispy and roasted rather than steamed.
