Easiest Pickled Red Onions

I love all pickled things. I love pickles and spicy pickled peppers and sour kraut and especially love pickled red onions, but they really can get pricey if you are buying them as often as I am. I am constantly putting pickled red onions on my salads, sandwiches, wraps, avocado toast and pretty much everything I eat. Does it sound like I’m a little obsessed? It’s okay because I am and soon you will be too!

I am sure there are all kinds of seasonings and spices I could and probably should be putting in this recipe, but it’s nice that keep it simple. This recipe takes only 3 basic ingredients and takes very little time to do. I like to prep it at the beginning of the mealprep so that it can cool while I prep the rest of the food.

For this recipe I always  use just white distilled vinegar because it is cheap and I can get a bottle that is about the size of my torso. However, you can use many type stuff of vinegar for this recipe, but I would keep the color as light as possible so that you get those nice pink onion slices.

Easiest Pickled Red Onions

prep time: 10 minscook time: 10 minstotal time: 20 mins


  • 1 medium red onion
  • 3/4 cup water
  • 3/4 cup distilled white vinegar


  1. Slice red onion into thin slices
  2. Place water and vinegar in a saucepan and bring to a simmer over high heat and then remove from heat
  3. Pack red onions into a 2 cup mason jar
  4. Pour water and vinegar over onion slices and allow the jar to cool completely - about an hour
  5. Secure lid tightly and store in the refrigerator for as long as they last!
