These One Pan Greek Yogurt Mashed Potatoes are the easiest and creamiest mashed potatoes you will ever make. Everything cooks in one pot with no straining or draining required which makes cleanup incredibly simple. Greek yogurt replaces the heavy cream and most of the butter for a mashed potato that is lighter, higher in protein, and just as rich and creamy as the classic version.

Here’s a quick look at the ingredients you need to make these greek yogurt mashed potatoes.

  • Yellow potatoes – Yellow potatoes like Yukon Gold are the best choice for creamy mashed potatoes. They have a naturally buttery flavor and a smooth, creamy texture when mashed. You can leave the skins on for a more rustic look and extra nutrients, or peel them for a smoother result.
  • Whole milk – Whole milk adds creaminess and helps bring the mashed potatoes to the right consistency. Use whole milk for the best results. Lower fat milk will make the potatoes thinner and less rich.
  • Greek yogurt – This is the key ingredient that makes these mashed potatoes lighter and higher in protein than the classic version. Plain whole milk Greek yogurt gives the creamiest texture and a slight tang that tastes almost like sour cream. Make sure to use plain Greek yogurt and not flavored or sweetened.
  • Salted butter – A small amount of butter adds that classic rich, buttery flavor that makes mashed potatoes so comforting. Using salted butter means you can control the seasoning as you go.
  • Salt – Season generously and taste as you go. Potatoes need a good amount of salt to taste their best.

How to make A Greek yogurt mashed potatoes

Step 1: Place cubed potatoes in a large pot and cover with cold water until theres about an inch of water* above the potatoes and gently stir in 2 tbsp kosher salt

Step 2: Bring water to a boil, cover the pot, reduce to a simmer. After 10 minutes, check to make sure the potatoes are fork tender. Drain out the water and return the potatoes to the pot.

Step 3: While the potatoes are still warm, pour the milk, butter and sour cream into the pot and close the lid for 2 minutes so the butter melts.

Step 4: Using a hand mixer, mix the potatoes** together on high speed until everything is evenly combined and the potatoes are mashed.

Taste the mashed potatoes and add salt as needed – be careful not to oversalt.

*Note: The water should just be enough to cover them and then the water is poured off or absorbed by the time the potatoes are tender. This means you mash everything right in the same pot without needing to transfer to a colander or separate bowl. Less cleanup and fewer steps.

**Note: Mashed potatoes should not be overmixed. Once the Greek yogurt, milk, and butter are added, mash just until smooth and creamy. Overmixing breaks down the starch in the potatoes and makes them gluey and dense instead of light and fluffy.

  • Use plain whole milk Greek yogurt. Make sure the yogurt is plain and not flavored or sweetened. Whole milk or full fat Greek yogurt gives the richest and creamiest results.
  • Do not overmix. Mash just until smooth and stop. Overmixing develops the starch in the potatoes and makes them gummy and sticky instead of light and fluffy.
  • Taste and season at the end. Always taste the mashed potatoes before serving and adjust the salt. Add a little more butter or Greek yogurt if you want them richer or creamier.

Can I use a different type of potato?

Yes! Russet potatoes also work well. They will give you a slightly fluffier and lighter mash. Yukon Gold potatoes are preferred for their creamy, buttery texture.

Can I make Greek yogurt mashed potatoes ahead of time?

Yes! Make them up to 2 days ahead and store in an airtight container in the fridge. Reheat in a pot over low heat, stirring frequently, and add a splash of milk to loosen them back up.

Is it okay to leave the skins on?

Yes! Yellow potato skins are very thin and tender. Leaving the skins on adds a rustic texture and extra nutrients. Just make sure the potatoes are scrubbed clean before cutting.

Can I freeze mashed potatoes?

Freezing is not recommended for Greek yogurt mashed potatoes. The yogurt and milk can cause the texture to become watery and grainy when thawed. They are best made fresh or stored in the fridge for up to 4 days.

Ingredients

  • 3 lbs yellow potatoes cut into 1-2 inch pieces you can leave skins on!
  • ¾ cup whole milk
  • ½ cup greek yogurt
  • 2 tbsp salted butter
  • Salt to taste
