Sausage Cheddar and Jalapeño Egg Bites

These Sausage Cheddar and Jalapeño Egg Bites are a healthy alternative to the Starbucks sous vide egg bite that you can make in your own kitchen! Just grab a silicone egg mold and a few simple ingredients and you can make these egg bites in the Instant Pot or on the stovetop!

Save the trip to Starbucks and make these soft, fluffy, and flavorful egg bites at home!

Last year I discovered that it was possible to make a copycat version of the Starbucks egg bites right in my own kitchen. Since then I have been trying many egg bite flavor combinations.

I wanted to make one with sausage so I grabbed some of my favorite Jones Dairy Farm pork sausages and came up with this egg bite recipe! The base is a simple mixture of egg, cottage cheese, and salt. Then, I mixed in some sausage, cheddar cheese, and jalapeños for lots of flavor.

What kitchen tools will I need to prep this healthy breakfast?

  • Measuring cups and measuring spoons
  • Blender
  • Sharp knife
  • Silicone egg bite mold
  • Frying pan
  • Instant Pot or stockpot

What ingredients will I need to make these Sausage Cheddar and Jalapeño Egg Bites?

You will be amazed at how easy it is to make these healthy egg bites with just a few basic ingredients.

  • Pork breakfast sausage links – I used Jones Dairy Farm Golden Brown Pork Sausage
  • Eggs
  • Cottage cheese
  • Cheddar cheese
  • Salt
  • Jalapeño

Let’s make Sausage Cheddar and Jalapeño Egg Bites!

Step 1: Cook the Sausage

First, heat a frying pan over medium heat. Then, add frozen sausage to the pan and cook over medium heat until golden brown on all sides, about 8-10 minutes.

Step 2: Blend the Egg Mixture

Next, place eggs, cottage cheese, and salt in a blender. Blend on high until a smooth even mixture remains.

Step 3: Prep the Bites

Then, spray a silicone egg bite mold with oil. Next, add chopped, cooked sausage, sliced jalapeño, and cheddar to each egg mold slot. Finally, pour the egg mixture on top of the other ingredients until each egg mold slot is completely full.

Step 4: Steam the Bites

If using an Instant Pot, add 1 cup of water to the Instant Pot. Then, lower the egg bites into the Instant Pot on a metal rack. Set to steaming for 10 minutes and then immediately release the pressure.

If cooking on the stovetop, add 2 cups of water to a stockpot. Then, lower the egg bites into the pot on a metal rack. Leave the lid of the pot and bring the water to a boil. Reduce the heat to medium-low, cover the pot and simmer for 12 minutes. Then, remove the lid and remove the pot from the heat.

Step 5: Enjoy!

Allow the egg bites to cool almost completely. Then, remove from the mold and enjoy!

How long will these egg bites keep in the fridge?

Once prepared, you should store your bites in an airtight container in the refrigerator. They should keep for up to 5 days in the refrigerator. You can reheat them in the microwave or in a steamer basket on the stovetop.

A sausage cheddar and jalapeño egg bite that cooks up fluffy like the Starbucks sous vide egg bites.

Ingredients

  • 5 eggs
  • 3/4 cup cottage cheese
  • 1/2 tsp salt
  • 1/3 cup cheddar cheese
  • 4 links pork breakfast sausage – I used Jones Dairy Farm Golden Brown Pork Sausage
  • 1 small jalapeño pepper

Instant Pot Instructions

  • Heat a frying pan over medium heat and add 4 link of frozen pork breakfast to the pan and cook until golden brown on all sides about 8-10 minutes
  • Add cottage cheese eggs and salt to a blender and blend on high until a smooth mixture remains
  • Spray a silicone egg mold with spray oil to grease
  • Add chopped sausage to each of the mold slots along with chopped jalapeño and cheddar cheese
  • Pour egg mixture and cottage cheese into each of the egg mold slots until almost compleltely full
  • Pour 1 cup water into the bottom of an Instant Pot
  • Place the egg molds on a metal rack and lower in the Instant Pot
  • Close the lid and set the vent to sealing
  • Cook on Steam for 10 minutes – the Instant Pot will come to pressure and then steam for 10 minutes
  • Once the Instant Pot beeps, manually release pressure and remove the lid
  • Allow the egg bites to cool almost completely before removing from the molds

Stovetop Instructions

  • Heat a frying pan over medium heat and add 4 link of frozen pork breakfast to the pan and cook until golden brown on all sides about 8-10 minutes
  • Add cottage cheese eggs and salt to a blender and blend on high until a smooth mixture remains
  • Spray a silicone egg mold with spray oil to grease
  • Add chopped sausage to each of the mold slots along with chopped jalapeño and cheddar cheese
  • Pour egg mixture and cottage cheese into each of the egg mold slots until almost compleltely full
  • Pour 2 cups water into the bottom of a large stock pot
  • Place the egg molds on a metal rack and lower into the pot
  • Turn the heat on high and allow the water to come to boil – about 3 minutes
  • Cover the pot with a lid and reduce the heat to medium-low allow the water to simmer and steam the egg bites for 12 minutes
  • Remove the lid and remove the pot from the heat
  • Allow the egg bites to cool almost completely before removing from the molds

    Can I use cream cheese instead of cottage cheese?

      the recipe has only been tested with cottage cheese, so I can’t say for sure. I’m not sure it’d work because the consistencies are so different!

    I’ve made this recipe many times now and have swapped ingredients to change it up. The first time around I inadvertently missed the blending step and simply mixed the cottage cheese and eggs together by hand and the recipe still worked perfectly. I’ve also swapped out some of the whole eggs for egg whites- recipe still works. I make a batch at the beginning of the week and use for breakfast or quick protein snack. Thank you for an awesome recipe… keep them coming!

        I bought an Instapot just to make these, lol. Finally ran across a egg mold and then found your recipes. Broccoli cheddar was good, made the bacon ones and discovered they are better 2 days old! Didn’t have guyere cheese, used mozzarella. Excellent. Sausage jalapeno bites are steaming now. Thank you!
