Sausage Cheddar and Jalapeño Egg Bites

A sausage cheddar and jalapeño egg bite that cooks up fluffy like the Starbucks sous vide egg bites.

Ingredients

  • 5 eggs
  • 3/4 cup cottage cheese
  • 1/2 tsp salt
  • 1/3 cup cheddar cheese
  • 4 links pork breakfast sausage - I used Jones Dairy Farm Golden Brown Pork Sausage
  • 1 small jalapeño pepper

Instructions

Instant Pot Instructions

  • Heat a frying pan over medium heat and add 4 link of frozen pork breakfast to the pan and cook until golden brown on all sides about 8-10 minutes
  • Add cottage cheese eggs and salt to a blender and blend on high until a smooth mixture remains
  • Spray a silicone egg mold with spray oil to grease
  • Add chopped sausage to each of the mold slots along with chopped jalapeño and cheddar cheese
  • Pour egg mixture and cottage cheese into each of the egg mold slots until almost compleltely full
  • Pour 1 cup water into the bottom of an Instant Pot
  • Place the egg molds on a metal rack and lower in the Instant Pot
  • Close the lid and set the vent to sealing
  • Cook on Steam for 10 minutes - the Instant Pot will come to pressure and then steam for 10 minutes
  • Once the Instant Pot beeps, manually release pressure and remove the lid
  • Allow the egg bites to cool almost completely before removing from the molds

Stovetop Instructions

  • Heat a frying pan over medium heat and add 4 link of frozen pork breakfast to the pan and cook until golden brown on all sides about 8-10 minutes

  • Spray a silicone egg mold with spray oil to grease
  • Add chopped sausage to each of the mold slots along with chopped jalapeño and cheddar cheese
  • Pour egg mixture and cottage cheese into each of the egg mold slots until almost compleltely full
  • Pour 2 cups water into the bottom of a large stock pot
  • Place the egg molds on a metal rack and lower into the pot
  • Turn the heat on high and allow the water to come to boil - about 3 minutes
  • Cover the pot with a lid and reduce the heat to medium-low allow the water to simmer and steam the egg bites for 12 minutes
  • Remove the lid and remove the pot from the heat
  • Allow the egg bites to cool almost completely before removing from the molds
