Slow Cooker Shredded Pork Tenderloin

I love to meal prep a delicious protein source with this Slow Cooker Shredded Pork Tenderloin recipe. Pour the simple ingredients in your crockpot, set it, forget it then shred the meat before you serve! This is my favorite way to prepare pork for quesadillas, tacos or burrito bowls.

I like to serve this shredded pork for my family as burrito bowls with rice, beans, sautéed peppers and onions, salsa, guacamole and easy pickled red onions. I also like to make baked tacos like these shredded chicken baked tacos.

Ingredients You’ll Need

You only need a few simple ingredients to make this delicious and tender pork tenderloin in your slow cooker. To find exact quantities, head to the recipe card.

  • Pork tenderloins – the tenderloin cut makes the perfect shredded meat for this recipe. You could also make this recipe with chicken thighs, a regular pork loin, or even a larger pork roast cut into a few smaller pieces.
  • Pineapple juice – the juice provides some sweetness which makes the pork really delicious. You can use chicken or beef broth instead, but make sure to add a bit of brown sugar to make up for the sweetness.
  • Kosher salt and black pepper – Salt and pepper are the basis of your seasoning for the pork. If you are using table salt, make sure to cut the amount in half
  • Chili powder and smoked paprika – these spices add a ton of flavor and smokiness that complements the pork
  • Garlic powder and onion powder – add garlic and onion powder for some additional aromatics and flavor
  • Cumin – I love including cumin in this spice blend, but if you don’t like cumin, you can omit and add a bit more chili powder

To make this recipe even easier, you could use a taco seasoning blend in place of the spices in the recipe.

How to make Slow Cooker Shredded Pork Tenderloin

Step 1: Place pork tenderloins in a slow cooker. Pour pineapple juice on top of the tenderloins as well as a seasoning blend. Toss to combine all ingredients.

Step 2: Cover the crockpot and cook on low for 4-6 hours or on high for 2-3 hours. You will know the pork is ready when it starts to easily shred with a fork and has an internal temperature of at least 165 F degrees.

Step 3: Once cooked through, set slow cooker on warm. Remove the pork and cut into pieces – do this so you don’t have massive shreds.

Step 4: Shred the smaller pieces of pork with 2 forks. Return pork shreds to the slow cooker and mix with any leftover juices. Serve over rice in a burrito bowl, in tacos, or in a quesadilla.

If you would like to thicken the sauce for this crockpot pork tenderloin after cooking, mix 1 tbsp of cornstarch into 1/4 cup of cold water and pour in with the juices in the slow cooker. Mix thoroughly and increase heat to high until the sauce thickens. Then, mix shredded pork into the thickened sauce.

Storage and Reheating

Store leftovers in an airtight container in the fridge for up to 4 days. To reheat, put the shredded pork in the microwave or in a sauté pan on the stove until warmed through.

Ingredients

  • 2 pork tenderloins 2 – 2.5lbs total
  • 12 oz pineapple juice 1.5 cups
  • 2 tsp kosher salt
  • 2 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cumin
  • 1/2 tsp black pepper
  • 1/4 tsp smoked paprika

Instructions

  • Place 2 pork tenderloins in a slow cooker and pour 1.5 cups of pineapple juice over top. Mix 2 tsp salt, 2 tsp chili powder, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp cumin, 1/2 tsp black pepper, and 1/4 tsp smoked paprika.
  • Pour seasoning mixture over pork. Set slow cooker on low and cook on low for 4-6 hours.
  • Set slow cooker on warm. Remove the pork and cut into pieces – do this so you don’t have massive shreds.
  • Shred the smaller pieces with 2 forks. Return shredded pork to the crockpot to toss with the leftover juices. Without the extra juices the pork will dry out so be sure to use them.
  • Store any leftovers in an airtight container in the fridge for up to 4 days.
