Ingredients

boneless skinless chicken breast

Greek yogurt

lemon juice

olive oil

poppy seeds

salt

diced red onion

chopped celery
1/2
cup
sliced almonds
1/2
cup
dried cranberries
Instructions
Add chicken breasts to a sauce pot and fill the pot with cold water
Bring the water to a boil
Cover the pot and reduce to a simmer
Simmer and poach the chicken for 14 minutesÂ
Remove the chicken from the pot and allow it to cool slightly
While the chicken cools combine the Greek yogurt, lemon juice, olive oil, salt, and poppy seeds in asmall bowl
Shred the chicken with two forks
Add the shredded chicken, diced red onion, chopped celery, sliced almonds, and dried cranberries
Toss all of the ingredients in the greek yogurt poppyseed dressing
Mix until thoroughly combined
