Cut bells peppers, red onion, and chicken into thin strips and add to the Instant Pot
Combine chili powder, salt, cumin, oregano, paprika, cayenne, black pepper, and garlic powder in a small bowl
Pour the chicken broth into the spice mixture and combine fully
Pour the broth and spices into the Instant Pot and stir to combine all the ingredients
Close the instant pot and set the vent to sealing
Set the Instant Pot on manual for 8 minutes - the IP will come to pressure (about 10 minutes) and then cook
After 8 minutes of cooking at pressure the Instant Pot will beep. Manually release the pressure and remove the lid
If you want a slightly thicker sauce set the Instant Pot to saute and combine 1/2 tbsp of arrowroot starch with 2 tbsp of warm water, pour the mixture into the Instant Pot while stirring the fajitas
Continue stirring for a minute or so as the sauce thickens
Turn off the Instant Pot and enjoy on tortillas, rice or cauliflower rice
