Ingredients

medium shallot roughly chopped

loosely packed parsley leaves

lemon juice

white wine vinegar

tbsp
dijon mustard

olive oil
Instructions
Place shallot, fresh parsley, salt, pepper, dijon mustard, lemon juice, and white wine vinegar in a blender
Blend on high until fully combined
With the blender running on low, slowly pour the olive oil into the blender in a steady stream
Continue blending until a smooth even dressing remains
Pour into a jar to store and store in the refrigerator for up to 2 week
Shake well before each use
