1small red onion or 1/2 of a large red onioncut into thinly sliced half moons
1english cucumber or 4 small cucumberssliced in half, seeds removed and cut into half moons
1green bell pepperseeds removed and cut into thin strips
8ozof feta in brinebrine drained, cut into small cubes
8ozcherry tomatoescut in half
1/2cupkalamata olivespitted
2tbspextra virgin olive oil
2tbspred wine vinegar
1tspdried oregano
sea salt
fresh mintfor garnish
Instructions
Place sliced red onion, cucumber, green bell pepper, feta, cherry tomatoes and kalamata olives in a large mixing bowl.
Pour olive oil and red wine vinegar over top of the bowl. Sprinkle the dried oregano and some sea salt over top toss to combine - taste and see if you need to add a little more salt.
