Pumpkin Spice Chocolate Chip Cookies

Gluten free pumpkin spice chocolate chip cookies that are the perfect treat for fall.

Ingredients

  • 1 egg
  • 1/4 cup melted coconut oil
  • 1/2 cup pumpkin puree
  • 3/4 cup brown sugar (packed)
  • 1.5 cup almond flour
  • 1/4 cup coconut flour
  • 2 tsp pumpkin pie spice
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup chocolate chips  

Instructions

  1. Preheat oven to 350F and line a baking sheet with parchment paper
  2. Add egg, coconut oil, pumpkin puree, and brown sugar to a large mixing bowl and whisk to combine
  3. Add almond flour, coconut flour, salt, baking soda, and pumpkin pie spice to the bowl and fold in with a spatula
  4. Add chocolate chips to the batter and fold in with a spatula
  5. Scoop 1 tbsp per cookie onto a baking sheet – you should have 20 cookies
  6. Bake at 350F for 11 minutes – take the tray out of the oven and bang down on the stove top to flatten
  7. Return the tray to the oven and bake for an additional 10 minutes
  8. Remove from the oven allow to cool completely and enjoy!
  9. I recommend storing these in the refrigerator for freshness
