White Balsamic Vinaigrette
This easy white balsamic vinaigrette is the perfect salad dressing to keep in your fridge at all times

- 1 tsp dijon mustard
- 1/4 cup fresh lemon juice
- 1/4 cup white balsamic vinegar*
- 1/2 tsp salt
- 1/4 tsp fresh cracked black pepper
- 1/2 cup extra virgin olive oil
Add dijon mustard, lemon juice, white balsamic vinegar, salt and pepper to a high speed blender
Blend on medium until all of the ingredients are evenly combined
While the blender is running on medium-low slowly pour the olive oil into the blender in a steady stream and keep blending as a smooth mixture forms
Increase the speed of the blender a little to thicken and emulsify the dressing.
Pour the dressing into a glass jar and store in the refrigerator
- *Use any kind of vinegar that you like. I like white wine vinegar, apple cider vinegar, rice vinegar, regular balsamic or white balsamic best
- store in a glass jar in the fridge for up to 2 weeks
