Ingredients

  • 6 strips bacon
  • 1 head iceberg lettuce
  • ½ cup cherry tomatoes
  • ½ cup blue cheese dressing
  • ½ cup crumbled blue cheese
  • 1 tbsp finely sliced fresh chives

Instructions

  • Cook bacon until crispy, chop into crumble and set aside.
  • Cut head of iceberg into quarters and cut the core off the bottom of each piece. Place each quarter on an individual salad plate or one large serving plate.
  • Cut the cherry tomatoes into quarters.
  • Drizzle about 2 tbsp of blue cheese dressing over each quarter of iceberg lettuce.
  • Arrange crumbled bacon, crumbled blue cheese, tomatoes and chives on top of the lettuce - its okay if some falls to the side of the lettuce! Serve with extra dressing on the side.

Notes

  • you can use a homemade blue cheese dressing or store bought
  • substitute regular bacon with turkey bacon
