Blend milk, cottage cheese, sugar and cocoa powder together with an immersion blender or standard blender and pour into a bowl.
Add rolled oats, chia seeds and crumbled oreo thins to the bowl and mix to combine thoroughly. I like to let this sit on the counter for 10-15 minutes after mixing and then mix again before placing in the fridge.
Cover the bowl or transfer to an airtight container and place in the fridge overnight.
Separate into 3 servings and serve with more crumbled oreos on top or with fresh fruit.
Notes
- Blend the cottage cheese smooth. This is the key to a creamy base with no lumps. Blend the cottage cheese with the milk, cocoa powder, and sugar before adding the oats and chia seeds.- Add the Oreos right before eating. Crumbling the Oreos on top the night before makes them soggy by morning. Keep them separate and add them right before eating for the best crunch.- Use rolled oats, not quick oats. Rolled oats hold their texture much better overnight and give you a chewier, more satisfying consistency. Quick oats will turn too soft and mushy.- Adjust the sweetness to taste. The recipe calls for 2 tablespoons of sugar. If you want it less sweet, start with 1 tablespoon and taste before adding more. Truvia or any other sweetener works as a direct swap.
