Apple Cinnamon Muffins

Ingredients

  • 1 ½ cups peeled and diced apples about 5oz cut into ¼” cubes
  • 2 tsp ground cinnamon
  • 2 tsp lemon juice
  • 2 eggs
  • ¼ cup milk
  • ½ cup plain yogurt
  • 1 cup granulated sugar
  • ¼ cup brown sugar - packed
  • ¼ cup vegetable oil
  • 2 tsp vanilla extract
  • 1 ¾ cups all purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ¼ tsp kosher salt

Instructions

  • Preheat oven to 350F. In a small bowl mix the diced apples, cinnamon and lemon juice and set aside
  • Whisk eggs, milk, yogurt, sugar, brown sugar, oil, and vanilla together in a large mixing bowl.
  • In a separate bowl combine the flour, baking powder, baking soda and salt.
  • Fold dry ingredients into wet with a flat spatula and then mix the cinnamon apples into the mixture.
  • Line 12 muffin cups with liners and scoop about ⅓ cup of batter into each of the cups.
  • Place in the oven and bake at 350F for 30 minutes. Cool completely and enjoy!

Notes

  • To make these muffins gluten free use a 1:1 ratio gluten free flour blend
  • To make them dairy free use a vegan yogurt
