Ingredients
- 2 lb chicken wings (separated into flats and drumettes)
- Spray avocado oil
- 2 tsp fresh cracked black pepper (1 tsp for dry rub, 1 tsp for sauce)
- 2 tsp salt
- 1 tsp garlic powder
- 1/4 cup melted butter or ghee
- 2 tbsp fresh lemon juice
- 1 tsp lemon zest
- 1 tsp dijon mustard
Instructions
- Remove wings from the refrigerator and pat down with paper towels
- Spray lightly with avocado oil or brush on a light layer of oil with a food bush
- Combine 2 tsp salt, 1 tsp fresh cracked black pepper, 1 tsp garlic powder in a small bowl
- Season wings on all sides with the seasoning mixture
- Preheat grill to med-high heat
- Place seasoned wings on the warm grill – if your grill runs hot and you are seeing a lot of flames flare up, reduce the heat. We don’t want to burn the wings
- Cook the wings for 15-20 minutes in a closed grill rotating every 3 minutes – the constant rotation will allow the skin to crisp without burning
- Remove the wings from the grill when the internal temp reaches 170F
- While the wings are still warm from the grill prepare the sauce by combining melted butter or ghee, lemon juice, lemon zest, dijon mustard and 1 tsp cracked pepper in a small bowl
- Toss the wings in this sauce and enjoy! You can use the excess sauce for dipping as you eat
