Prep: 15 minutesCook: 15 minutesTotal: 30 minutes
Servings: 4 servings 1x

Ingredients

  • 2 lb chicken wings (separated into flats and drumettes)
  • Spray avocado oil
  • 2 tsp fresh cracked black pepper (1 tsp for dry rub, 1 tsp for sauce)
  • 2 tsp salt
  • 1 tsp garlic powder
  • 1/4 cup melted butter or ghee
  • 2 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1 tsp dijon mustard

Instructions

  1. Remove wings from the refrigerator and pat down with paper towels
  2. Spray lightly with avocado oil or brush on a light layer of oil with a food bush
  3. Combine 2 tsp salt, 1 tsp fresh cracked black pepper, 1 tsp garlic powder in a small bowl
  4. Season wings on all sides with the seasoning mixture
  5. Preheat grill to med-high heat
  6. Place seasoned wings on the warm grill – if your grill runs hot and you are seeing a lot of flames flare up, reduce the heat. We don’t want to burn the wings
  7. Cook the wings for 15-20 minutes in a closed grill rotating every 3 minutes – the constant rotation will allow the skin to crisp without burning
  8. Remove the wings from the grill when the internal temp reaches 170F
  9. While the wings are still warm from the grill prepare the sauce by combining melted butter or ghee, lemon juice, lemon zest, dijon mustard and 1 tsp cracked pepper in a small bowl
  10. Toss the wings in this sauce and enjoy! You can use the excess sauce for dipping as you eat
