By far the most popular recipes on my site are the one pan meals. There is something so satisfying about being able to throw all of the ingredients into one pan and end up with a complete meal. This is especially important during the Whole30 when you need to quickly get a healthy and balanced meal on the table.
Of course, with any meal, its nice to have some sides. I like to serve this Whole30 cashew chicken and veggies with some sauteed cauliflower rice. I also garnish my meal with chopped cashews, green onion, and fresh lime juice.
What kitchen tools do you need to make this cashew chicken stir fry?
You will need a sharp knife for cubing the chicken and chopping the veggies. You will need a blender to make the stir fry sauce. Finally, you will need either a wok or Instant Pot for cooking the meal.
What ingredients do you need to make your Whole30 Cashew chicken and veggies?
Boneless skinless chicken breasts
Lets make this simple Whole30 dinner!
Step 1 – Cube, Chop, Mince
Cube the chicken breast. Chop the bell peppers, red onion, and broccoli. Mince the garlic.
Step 2 – Blend and mix
Blend the sauce ingredients in a blender. Mix the spices together and then toss the cubed chicken in that spice mixture.
Step 3 – Saute and simmer
Saute the garlic in avocado oil. Then, add the chicken to the pan and continue to saute. Remove the chicken from the pan and replace it with the chopped veggies.
Cook the veggies until soft. Add the chicken back to the pan and pour in the sauce. Simmer the chicken and veggies in the sauce for 5 minutes.
Step 4 – Enjoy!
Enjoy your Whole30 cashew chicken and veggies over cauliflower rice and garnished with some cashews, green onion, and fresh lime juice.
Can I make this healthy Whole30 recipe in the Instant Pot?
Yes! This is a great easy way to make this recipe. Cube your chicken, chop veggies, mince the onion, mix the spices and blend the sauce. Then, saute the garlic and chicken in the oil in the Instant Pot for 4 minutes.
Pour the veggies and sauce into the Instant Pot. Cook on manual high pressure for 8 minutes. Manually release pressure and enjoy!
Can I make this Whole30 Cashew chicken and veggies and freeze it?
Yes, but the chicken may be dried our when it is reheated from frozen. I recommend cooking it and enjoying it fresh.
