What is a spatchcock chicken?

A spatchcocked chicken is a whole chicken with the backbone removed. The chicken can then lay flat as it is roasted. The chicken cooks faster and cooks evenly.

What You'll Need

3-5lb whole chicken Kitchen shears Baking sheet Meat thermometer Butter Salt and pepper Herbs Lemon Garlic

Grab a 3-5lb whole chicken

Place the chicken breast side down on her cutting board

Turn the chicken around so the wings face towards you

Locate the back bone

Cut along one side of the backbone

Cut along the other side of the back bone

Remove the back bone

Flip breast side up

Press down on the breast  to flatten
