This easy breakfast casserole recipe is made with simple and healthy ingredients like ground turkey, tomatoes, onions, goat cheese and whole eggs.



1 tbsp avocado oil

1 yellow onion

1 tsp salt

1/2 tsp pepper

1/2 tsp garlic powder

16oz ground turkey

12 eggs

1 cup fresh chopped tomatoes + more for topping

1/2 cup crumbled goat cheese


Preheat oven to 350F and grease a 9×13 casserole pan – I useĀ avocado oil spray

Dice the yellow onion
Heat 1 tbsp oil in a frying pan over medium-low heat and add the onion
Saute the onion for 4 minutes tossing frequently
Add salt, pepper and garlic powder to the onions and saute for another minute
Add ground turkey to the pan and increase heat to medium
Cook ground turkey, breaking up into small crumbles for 6 minutes
While the turkey cooks, crack 12 eggs directly into the casserole dish and scramble
Add chopped tomatoes to the pan with the turkey and onions and cook for more minutes
Remove the pan from the heat and allow the mixture to cool slightly
Once cooled stir the turkey and tomato mixture into the eggs in the casserole dish
Sprinkle crumbled goat cheese over top and stir gently
Optional: add tomato slices on top
Bake in the oven at 350F for 45 minutes
Allow to cool slightly and then slice into squares
