Ingredients
- 1 tbsp avocado oil
- 1 yellow onion
- 1 tsp salt
- 1/2 tsp pepper
- 1/2 tsp garlic powder
- 16oz ground turkey
- 12 eggs
- Optional – 1 cup cottage cheese
- 1 cup fresh chopped tomatoes + more for topping
- 1/2 cup crumbled goat cheese
Instructions
- Preheat oven to 350F and grease a 9×13 casserole dish with spray oil
- Dice the yellow
- Heat the oil in a frying pan over medium-low heat and add the onion
- Saute the onion until soft and fragrant – about 4 minutes
- Add salt, pepper and garlic powder to the onions and saute for another minute
- Increase the heat to medium and add the ground turkey to the pan
- Cook the ground turkey and break up into small crumbles until browned – about 6 minutes
- While the turkey cooks crack 12 eggs directly into the casserole dish and scramble the eggs ** If you want to make the casserole fluffier and add more protein, blend the eggs with 1 cup cottage cheese before pouring into the casserole dish
- Add chopped tomatoes to the pan with the turkey and onions and cook for 2 more minutes
- Remove the pan from the heat and allow the mixture to cool slightly
- Once cooled stir the turkey and tomato mixture into the eggs in the casserole dish
- Sprinkle crumble goat cheese over top and stir in gently
- If desired, add thinly sliced tomato on the top of the casserole
- Bake in the oven at 350F for 45 minutes
- Remove from the oven and allow to cool before slicing into squares
