I made this strawberry chocolate paleo breakfast bread because I was craving a banana bread without the bananas. Weird I know, but I wanted a sweet little breakfast bread that I could have with a cup of coffee and this ended up being the perfect flavor combo for that!!

I wanted to make this a grain free and paleo bread, but I also wanted to make sure it was light and fluffy. That’s not always so easy to do with almond flour, but I have found that if you use an electric hand mixer to whip the egg whites separately from the rest of the ingredients. Then slowly fold the egg whites into the rest of the mixture with a rubber spatula. Then, as the bread bakes, some of the bubbles from the egg whites remain and you are left with a nice fluffy breakfast bread!! You can see exactly how I made this bread in the video below.
This strawberry chocolate paleo breakfast bread only has a very subtle amount of sweetness because I used a little maple syrup to sweeten, natural sweetness from the strawberries and 85% dark chocolate pieces. If your prefer your bread a little sweeter you can add some extra maple syrup and use a milk chocolate! Make sure you use the parchment paper or LOTS of oil to line your loaf pan because otherwise this bread is sure to stick.
