Twice last week I brought these insanely easy sheet pan fajitas for lunch at work and twice I was too busy to sit down and eat until about 3:30 or 4pm. I ended up eating both meals in about 10 minutes in my car, but they were still SO good. This simple sheet pan fajitas recipe is the kind of recipe that reminds me why I love creating and sharing easy meal prep recipes with all of you. It takes very little time to throw this recipe together, yet it tastes incredible even when its reheated in a microwave (I don’t have one of those at home, but if you’re an office dweller like me its a necessary evil.
Lately I have been bringing any meal prep leftovers to my girlfriend for her to bring to work as well. I feel a little guilty that none of this made its way to her because it was just too good and honestly I was a little too busy last week to get some to her. On my instagram you guys have been asking me for meals that are boyfriend/husband/significant other friendly and these sheet pan fajitas definitely fall into that category. I even recommending doubling the batch for a taco night with a group of friends!
I paired my sheet pan fajitas with seasoned cauliflower rice for an extra serving of veggies, but they would also be fantastic on tortillas or with regular rice. Next time I make them I plan on putting them on a massive fajita salad with some pico de gallo and homemade guac. This recipe could also be made with steak, pork or shrimp. I love that the ingredients for these sheet pan fajitas could come entirely from your freezer and pantry. I almost always have a bag of shrimp or some chicken breast in my freezer so next time I return from a trip or busy weekend this will be my go to simple meal prep. Plus, the clean up is very minimal since you make it all on the same pan. If you prep this for lunch and you use chicken, try to consume within 3 days of cooking for freshness.
