Ingredients
- 1 (10oz) pack of dried soba noodles
- 2 boneless skinless chicken breasts
- 1 tbsp avocado oil
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 cup shredded carrots
- 1 cup cooked and shelled edamame
- 1/4 cup sliced green onion
- 1/4 cup coconut aminos or soy sauce
- 1 tbsp sesame oil
- 1 tbsp rice vinegar
- 2 tsp fresh grated ginger
- 1 tbsp toasted sesame seeds
Instructions
- Prepare soba noodles according to package instructions in lightly salted water
- Cut chicken breast into small bite size pieces and season with salt and pepper
- Heat avocado oil in a frying pan over medium-high heat
- Add seasoned chicken to the pan and cook for 6 minutes – tossing frequently
- Remove chicken from heat and allow to cool
- Drain and rinse cooked soba noodles
- Add soba noodles to a large mixing bowl with carrots, edamame, green onion and cooked chicken
- In a small mixing bowl whisk together coconut aminos (or soy sauce), sesame oil, rice vinegar and fresh ginger
- Pour sauce over the soba noodles, chicken and veggies and toss
- Garnish with sesame seeds
