Sesame Soba Noodles and Chicken

Soba noodles and chicken in a sesame, soy, ginger sauce

Ingredients

  • 1 (10oz) pack of dried soba noodles
  • 2 boneless skinless chicken breasts
  • 1 tbsp avocado oil
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 cup shredded carrots
  • 1 cup cooked and shelled edamame
  • 1/4 cup sliced green onion
  • 1/4 cup coconut aminos or soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 2 tsp fresh grated ginger
  • 1 tbsp toasted sesame seeds

Instructions

  1. Prepare soba noodles according to package instructions in lightly salted water
  2. Cut chicken breast into small bite size pieces and season with salt and pepper
  3. Heat avocado oil in a frying pan over medium-high heat
  4. Add seasoned chicken to the pan and cook for 6 minutes – tossing frequently
  5. Remove chicken from heat and allow to cool
  6. Drain and rinse cooked soba noodles
  7. Add soba noodles to a large mixing bowl with carrots, edamame, green onion and cooked chicken
  8. In a small mixing bowl whisk together coconut aminos (or soy sauce), sesame oil, rice vinegar and fresh ginger
  9. Pour sauce over the soba noodles, chicken and veggies and toss
  10. Garnish with sesame seeds
