Sausage Cheddar and Jalapeño Egg Bites

A sausage cheddar and jalapeño egg bite that cooks up fluffy like the Starbucks sous vide egg bites.

Ingredients

  • 5 eggs
  • 3/4 cup cottage cheese
  • 1/2 tsp salt
  • 1/3 cup cheddar cheese
  • 4 links pork breakfast sausage – I used Jones Dairy Farm Golden Brown Pork Sausage
  • 1 small jalapeño pepper

Instructions

Instant Pot Instructions

  1. Heat a frying pan over medium heat and add 4 link of frozen pork breakfast to the pan and cook until golden brown on all sides about 8-10 minutes
  2. Add cottage cheese eggs and salt to a blender and blend on high until a smooth mixture remains
  3. Spray a silicone egg mold with spray oil to grease
  4. Add chopped sausage to each of the mold slots along with chopped jalapeño and cheddar cheese
  5. Pour egg mixture and cottage cheese into each of the egg mold slots until almost compleltely full
  6. Pour 1 cup water into the bottom of an Instant Pot
  7. Place the egg molds on a metal rack and lower in the Instant Pot
  8. Close the lid and set the vent to sealing
  9. Cook on Steam for 10 minutes – the Instant Pot will come to pressure and then steam for 10 minutes
  10. Once the Instant Pot beeps, manually release pressure and remove the lid
  11. Allow the egg bites to cool almost completely before removing from the molds

Stovetop Instructions

  1. Heat a frying pan over medium heat and add 4 link of frozen pork breakfast to the pan and cook until golden brown on all sides about 8-10 minutes

  3. Spray a silicone egg mold with spray oil to grease
  4. Add chopped sausage to each of the mold slots along with chopped jalapeño and cheddar cheese
  5. Pour egg mixture and cottage cheese into each of the egg mold slots until almost compleltely full
  6. Pour 2 cups water into the bottom of a large stock pot
  7. Place the egg molds on a metal rack and lower into the pot
  8. Turn the heat on high and allow the water to come to boil – about 3 minutes
  9. Cover the pot with a lid and reduce the heat to medium-low allow the water to simmer and steam the egg bites for 12 minutes
  10. Remove the lid and remove the pot from the heat
  11. Allow the egg bites to cool almost completely before removing from the molds
