Poppy Seed Chicken Salad

Chicken salad made with a poppy seed dressing

  • 1.5 lb boneless skinless chicken breast
  • 1/2 cup Greek yogurt
  • 2 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 tbsp poppy seeds
  • 1 tsp salt
  • 1/2 cup diced red onion
  • 1/2 cup chopped celery
  • 1/2 cup sliced almonds
  • 1/2 cup dried cranberries


  1. Add chicken breasts to a sauce pot and fill the pot with cold water
  2. Bring the water to a boil
  3. Cover the pot and reduce to a simmer
  4. Simmer and poach the chicken for 14 minutes 
  5. Remove the chicken from the pot and allow it to cool slightly
  6. While the chicken cools combine the Greek yogurt, lemon juice, olive oil, salt, and poppy seeds in asmall bowl
  7. Shred the chicken with two forks
  8. Add the shredded chicken, diced red onion, chopped celery, sliced almonds, and dried cranberries
  9. Toss all of the ingredients in the greek yogurt poppyseed dressing
  10. Mix until thoroughly combined
