Pineapple Raspberry and Coconut Popsicles

I chose raspberry, pineapple, and coconut for my popsicles because I love the flavor combination and the colors look beautiful swirled together. It almost makes me feel like I am having a tropical cocktail. You can use any frozen fruit you have if you don’t have pineapple and raspberries.

- Frozen pineapple
- Frozen raspberries
- Pacific Foods Unsweetened Original Coconut Plant-Based Beverage
- Maple syrup (optional)
- Salt
Let’s make some Pineapple Raspberry and Coconut Popsicles!
Step 1: Prepare a raspberry puree
First, prepare the raspberry swirl layer by adding frozen raspberries and water to a saucepan. Then, heat over high for about 3 minutes. Next, mash with a potato masher or the back of a fork.
After mashing completely reduce the heat to low and simmer for 10 minutes – be careful not to burn! Then, remove from heat and allow to cool completely.
Step 2: Prepare pineapple mixture
Next, prepare the pineapple mixture by blending the frozen pineapple, coconut beverage, salt and maple syrup (you can leave the maple syrup out if you want if it is sweet enough with just fruit). Blend until a smooth even mixture remains.
Step 3: Prep the popsicles and freeze
Finally, assemble the popsicles by filling a 10 slot popsicle mold. First, fill half of each mold with the pineapple mixture. Then, spoon in 1/2 tbsp of the raspberry puree into each mold.
Again fill the mold with the pineapple mixture until full. Then, stick popsicle sticks in each pop and place the molds in the freezer to freeze. Freeze for at least 12 hours to ensure they are fully solid and store in the fridge for up to a month!
How long will these healthy homemade popsicles keep in the freezer?
Once fully frozen, move these popsicles from the mold into an airtight container. You can even wrap them individually in wax paper. Store in the freezer for up to 1 month for the best taste.
