Personal Tortilla Pizza

Make a personal pizza in less than 15 minutes using a tortilla and a simple homemade sauce

Ingredients

  • 1 tortilla (flour tortilla works best, but you can substitute with a gluten free or grain free tortilla)
  • 1.5 tbsp tomato paste
  • 1 tbsp water
  • 1/4 tsp salt
  • 1/4 tsp dried oregano
  • 1/4 tsp dried basil
  • 1/4 tsp garlic powder
  • 1/4 tsp crushed red pepper flakes
  • 1/2 cup mozzarella cheese
  • 1 oz pepperoni (optional, feel free to use other toppings)

Instructions

  1. Preheat oven or toaster oven to 400F and line a baking sheet with tinfoil
  2. Lay a tortilla on the tinfoil
  3. In a small bowl mix together tomato paste, water, salt, oregano, basil, garlic powder and crushed red pepper flakes to make a quick pizza sauce – if you have a jarred pizza sauce on hand you can use 2.5 tbsp of that instead
  4. Spread pizza sauce over the tortilla
  5. Sprinkle mozzarella cheese over the sauce
  6. Top with pepperoni or topping of choice
  7. Bake the pizza in a toaster oven at 400F for 7 minutes or in the real oven at 400F for 10 minute
  8. Slice into 4 slices and enjoy!
