Paleo Pumpkin Waffles with Cinnamon Apples (Breakfast Meal Prep)

Paleo Pumpkin Waffles

  • 2 tbsp melted coconut oil
  • 2 eggs
  • 1/2 cup pumpkin puree
  • 1 tbsp maple syrup
  • 1/4 cup coconut flour
  • 1/4 tsp salt
  • 1 tsp pumpkin pie spice
  • 1/2 tsp baking powder

Cinnamon Apples

  • 1 tsp coconut oil
  • 1 tsp ground cinnamon
  • 2 medium apples


  1. Prepare apples by chopping in bite size cubes and tossing with cinnamon
  2. Melt 1 tsp coconut oil in a frying pan over medium heat
  3. Toss apples in oil and cook for 5-7 minutes or until soft
  4. While the apples cook, heat a waffle iron to medium heat and spray with a cooking oil spray like coconut oil
  5. In a mixing bowl whisk together eggs, pumpkin puree, melted coconut oil, and maple syrup
  6. In a separate bowl combine coconut flour, salt, baking powder, and pumpkin pie spice
  7. Fold dry ingredients into wet and combine fully
  8. Pour 1/4 cup of waffle batter onto the center of a waffle iron and allow to cook fully
  9. Repeat the step above until you use all of the batter – I usually get 5 small waffles
  10. Enjoy immediately with warm apples over the waffle or store separately for meal prep
