I think my meal prep will be getting a major upgrade now that I have mastered grilled chicken. It tastes incredible and keeps my kitchen clean!

With these thighs you get all of the delicious buffalo wing flavor, but WAY easier to eat and made with paleo and Whole30 ingredients. If you don’t have access to a grill you can still make this delicious recipe indoors with a grill pan.

To make these delicious Whole30 grilled buffalo chicken thighs simple heat up your grill to medium-high heat and let it warm up. Season boneless skinless chicken thighs with the salt, pepper and chili powder seasoning mixture. Heat up the ghee and hot sauce mixture and mix thoroughly. Bring sauce and thighs outside with a season brush and grilling tongs. Cook the thighs for 4 minutes on each side. Brush with the sauce and cook for 2 minutes. Whole30 Grilled Buffalo Chicken Thighs

ingredients:

  • 1.5 lb boneless skinless chicken thighs
  • 2 tsp salt
  • 1 tsp pepper
  • 2 tsp chili powder
  • 1/4 cup hot sauce
  • 1/4 cup ghee

How to cook Whole30 Grilled Buffalo Chicken Thighs

  1. Preheat grill to medium high heat
  2. Mix salt, pepper and chili powder in a small bowl
  3. Season chicken thighs on top and bottom with seasoning mixture
  4. Heat hot sauce and ghee in a small bowl until ghee is melted and mix thoroughly
  5. Place chicken thighs on a warm grill
  6. Cook on one side for 4 minutes, flip and cook for another 4 minutes
  7. Before flipping again, brush the chicken liberally with the buffalo and ghee mixture
  8. Flip and cook for 2 minutes
  9. Brush the second side with buffalo and ghee mixture
  10. Flip and cook for a final  2 minutes
  11. Enjoy immediately or store in an airtight container in the refrigerator for up to 4 days.
