Spicy Pumpkin Pasta Sauce

Halloween is here! And before you (or your kids) dive into that bowl of candy, you might need a quick and delicious dinner option. This spicy pumpkin pasta sauce is perfect pre tick or treat comfort food. It only takes 20 minutes to put together and is a fun and festive way to get your veggies in on Halloween, no matter how old you are.

I have memories of dreading having to sit through dinner when I was little before heading out to trick or treat. My mom is an incredible mom which means she always had something healthy and filling on the table for us to eat before I went out in the neighborhood. Little did I know she was saving me from a stomach ache later in the night from eating too much candy as I ran from house to house with my friends. I might not have put up such a fight about eating my veggies if this spicy pumpkin pasta sauce was on the table!

This spicy pumpkin pasta sauce is rich and flavorful, but is still easy to make and is made with all plant based ingredients. Spicy pumpkin pasta is the perfect meal to feed your family before they chow down on all the halloween candy!

Speaking of eating your veggies, you can even sneak a few more into this dish depending on what kind of pasta you use. I used one of my favorite pasta alternatives that is made with green lentil, parsnip and cauliflower, but you would never know especially when topped with a flavorful sauce like this spicy pumpkin pasta sauce. It really just tastes like a delicious little bowl of rotini with a comforting, creamy sauce. I don’t usually eat a vegan diet so at times I forget to mention when a recipe, like this one, is fully plant based. So to all my plant based IG friends, this ones for you!

I served this recipe up pretty simply just in a bowl with some extra seasonings. It could easily be paired with some extra veggies or made as a side dish to a meat like chicken or sliced pork tenderloin. Perfect as a side if you are cooking for a big group or family. Pasta as a side dish makes me think of the old school italian restaurants where you get a small bowl of spaghetti with every single entree, how lovely. Read below to make this simple spicy pumpkin pasta sauce.

Yield: Sauce for 1/2 lb pasta

Spicy Pumpkin Pasta Sauce

prep time: 5 minscook time: 15 minstotal time: 20 mins

ingredients:

  • 1/2 of a medium yellow onion
  • 1 tbsp avocado oil
  • 1/2 cup vegetable broth (could use chicken or bone broth too)
  • 1 1/2 cup pumpkin puree
  • 2 tsp salt
  • 1/2 tsp ground black pepper
  • 1/2 tsp paprika
  • 1 tsp red chili powder

instructions:

  1. Evenly dice onions
  2. Add avocado oil to a large frying pan and heat on medium low heat
  3. Add onions to pan and saute on medium low for 10 minutes or until onions are soft and beginning to brown on the sides
  4. Increase the heat to medium and add vegetable broth to the pan
  5. Mix the both evenly with the onions and cook for 3 minutes
  6. While that is cooking add pumpkin puree and spices to a high speed blender or food processor
  7. Pour onion and broth into  blender and blend on high until all items are evenly combined
  8. Pour sauce over cooked pasta and enjoy!
