The other day I had a massive craving for the skillet queso at Chili’s… oddly specific craving I know. I figured instead of going to a Chili’s alone for queso I could make it myself! I bascially threw some ingredients together and I am in love. It is a bit thicker than a standard queso, but it is so filling and satisfying that it could be one of those appetizers that easily becomes a full meal.

One of the key elements to making this skillet queso is the cast iron skillet. I love cooking with a cast iron skillet because it is able to go from stovetop to oven and retain its heat. I recommend the 10” lodge cast iron skillet if you are cooking for yourself or a couple. If you have a larger family, you’ll probably want to get a size up.
For this queso you will heat the ground beef and spices over the stove top. Then you will add the fire roasted diced chiles and cubed cheddar and then pop in the oven for 15 minutes. When you remove from the oven all of the cheddar will be melty and you will just need to give it a good stir to combine all of the flavors before it is ready to serve. I’ve said it before, but one of the main reasons I am excited for the holiday season is for all of the good appetizers! Call me crazy, but I prefer them to both the entree and the desserts! This skillet queso would be the perfect item to add to your holiday appetizer list, but be sure to serve it with a spoon because this is a thick queso.
