Simple Chicken Salad

Anyone else pretend not to like foods that were cool to hate in middle school? You know what I'm talking about like tuna salad, potato salad and chicken salad. All the mayo-y salads! But the truth is that I really love them. The problem with buying them pre-packaged at a store or ordering them from a deli is that they are usually made with harmful vegetable oils like canola oil. Because of this I decided to make my own and the result was wonderful. This was the perfect thing to have in my refrigerator all week for a quick lunch or snack. This is meal prep at its finest!

Simple Chicken Salad


  • 1lb Boneless Skinless Chicken Breast
  • 1/2 Cup Chopped Celery
  • 1/3 Avocado Oil Mayo
  • 1 tsp Apple Cider Vinegar
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp Coconut Sugar


  1. Poach 1 lb chicken by placing raw chicken in a sauce pot and cover with water. Bring the water and chicken to a boil. Cover the pot, reduce heat and allow the chicken to simmer for 10 minutes.
  2. Turn off the heat and transfer chicken to a plate to cool.
  3. While the chicken is cooling, chop the celery and combine mayo, apple cider vinegar. salt, pepper and coconut sugar to make the sauce.
  4. Cube the chicken into 1/2 inch cubes and combine chicken, celery and sauce in a bowl.
  5. Store this in an airtight container in the fridge. This chicken gets better the longer it sits in the sauce so it will be perfect to make on a Sunday meal prep for lunch Monday!
