I always get asked on Instagram how I cook my salmon and 9 times out 10 it is done in my cast iron skillet so I get that crispy outside with a soft inside, but lately I have been feeling this Simple Sheet Pan Salmon in a sweet ginger marinade. It is an easy way to cook up both the veggies and the salmon together and get both perfectly cooked! I like eating this right away or using it as a part of my meal prep.

I am a big fan of sheet pan meals because it keeps things super simple and easy AND it keeps the clean up to a minimum. Which for me usually means my girlfriends cleanup is a minimum. We’ve got a great arrangement where she cooks and I clean. I think as long as I keep making meals that she likes I thiiiiink I will keep having a clean up crew (at least whenever I am at her house). She also gets to make requests. Her recent request was scallops which happen to be one of my favorites as well. I particularly love this scallop recipe for date night.

I highly reccomend it for a weeknight dinner when you are in a rush or adding it to a Sunday meal prep session. If I am using it for meal prep I usually throw it into a meal prep container with a salad. If I am eating it right away, then I definitely want it with cauliflower rice and extra sauce. If you are making this meal for Whole30 be sure that the pineapple juice that you are using is 100% juice and that the sesame oil doesn’t have any weird filler oils.

Simple Sheet Pan Salmon

  1. Preheat oven to 375F and line a baking sheet with parchment paper
  2. Combine ginger, pineapple juice, coconut aminos, and sesame oil in a small bowl
  3. Arrange salmon filets and snap peas on a baking sheet
  4. Pour sauce over fish and veggies, saving some to drizzle on the fish after its cooked.
  5. Season with salt
  6. Place in oven and bake at 375 for 15 minutes. Increase heat to 500F and cook for another 5 minutes
  7. Remove from oven and save for another meal or enjoy immediately with rice or cauliflower rice.
