I’m back with another insanely simple recipe made entirely with ingredients from my grocery challenge!! I made these little pizza tots to go along with my lunch as a snack, but I definitely think they would be perfect party appetizers or tailgating snack now that we are deep into football season (go sports!).

I’ve made my claim before that I don’t think we need to make everything in our lives out of cauliflower just to make them a little healthier, but I do think that cauli rice makes for the perfect little veggie tot. Plus, it is affordable and you can store it in your freezer so that you are ready to make these little veggie tots at any time.

To make the tot shape I just used my hands to mold the ingredients together, but to make more uniform shapes I recommend trying a silicone baking mold. I swapped out all of my cupcake trays for silicone ones and it has made a huge difference. I don’t have to deal with fighting to get a muffin out of the pan only to leave the bottom half stuck! Follow the instructions below and get yourself some tots!

Pizza tots are gluten free snacks made with simple, whole ingredients like cauliflower, but taste like a delicious little bite of pizza. Pizza tots are perfect snack or appetizer.
Yield: 12 tots

Pizza Tots

prep time: 15 minscook time: 35 minstotal time: 50 mins

ingredients:

  • 2 cups frozen riced cauliflower
  • 1 egg
  • 1 tbsp tomato paste
  • 1/2 cup shredded Parmesan cheese
  • 1 tsp salt 
  • 1/4 tsp ground black pepper
  • 1/4 tsp garlic powder
  • 1/2 tsp dried oregano

instructions:

  1. Preheat oven to 350F 
  2. Heat cauli rice in a pan over medium heat until fully warmed through, but not browning, about 5 minutes
  3. Place cauli rice in a thin, clean dish towel  and squeeze to drain water out. 
  4. While cauli rice is cooling, crack egg in  a large mixing bowl and whisk. Add tomato paste to whisked egg and combine thoroughly.
  5. Add spices and Parmesan cheese to tomato and egg mixture and combine. Then add cooled cauliflower rice to the mixture and combine fully.
  6. Form mixture into 12 tots on a lined baking sheet
  7. Bake for 35 minutes and allow to cool slightly on the baking sheet.
  8. Enjoy immediately or store in refrigerator for up to 5 days!
