Pistachio Crusted Chicken Tenders

I’m the kind of person where when I’m sad about something I cannot eat. I have zero appetite and pretty bad anxiety, but the not eating makes the anxiety even worse. It’s not great, BUT I found that if I have the right comfort foods like these homemade pistachio crusted chicken tenders I am able to eat. I went through a breakup where I had homemade tenders and sweet potato fries every single night for about 3 weeks. If that isn’t a ringing endorsement for making homemade chicken tenders, I don’t know what is.

If you told me a few years ago that I would be making pistachio crusted chicken tenders from scratch and sharing the recipe on a food blog I probably would have told you you were nuts. Just a few years ago I thought that sharing anything even remotely close to “junk food” on my blog and Instagram was wrong. My feed was a sea of boring kale salads and giant smoothies. I kept hearing about how eating healthy made everyone feel so amazing and somehow I just felt like total crap. I was so strict and restrictive about what I ate that I ended up pretty dang miserable in the process.

I feel so thankful that these days are behind me. I am now able to find foods that both make my body feel good AND I enjoy eating them. There is nothing worse than forcing yourself through a meal that you don’t enjoy. For me, and I think many people, stress plays a huge role in how I feel. I found that by trying to eat perfectly healthy I was introducing unnecessary stress into my life. Today I feel great having bacon and eggs for breakfast, a no bread turkey club for lunch, and some homemade pistachio crusted chicken tenders with sweet potato fries for dinner. Did you catch that? Two out of those three meals didn’t include any green veggies!! Something that would have made me super upset a few years ago is now a normal occurrence around here.

If making these pistachio crusted chicken tenders looks complex, do not fear. They are far simpler to put together than you may think. Start with some tenders or full chicken breasts that you can simply cut down into tenders. Then you use a simple breading process, but with paleo and whole30 friendly ingredients. Bake the tenders on a wire rack so that they crisp right up and then enjoy! I love serving these on a salad or with some homemade sweet potato fries. Pistachio Crusted Chicken Tenders

prep time: 10 minscook time: 30 minstotal time: 40 mins

ingredients:

  • 1.5 lb boneless skinless chicken tenders or breasts cut into tenders
  • 1 cup whole shelled pistachios (like these)
  • 2 eggs
  • 1/2 cup coconut flour  (like this)
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp garlic powder

instructions:

  1. Preheat oven to  400F and line a baking sheet with tinfoil and place an oven-safe wire rack on top. This rack ensures that the tenders crisp up in the oven - I use one like this
  2. Set up a breading station by whisking two eggs together in a bowl, processing the pistachios into smaller pieces in a food processor, and combining the coconut flour and spices in another bowl
  3. Bread each tender one at a time by rolling it in the coconut flour mixture, then dipping it in the egg and then rolling it in the crushed pistachios
  4. Lay each breaded tender on the wire rack.
  5. When all tenders are breaded place in the hot oven and cook for 15 minutes
  6. Flip each tender over and cook for another 15 minutes 
  7. Allow the tenders to cool and then enjoy! 
  8. Store in an airtight container in the refrigerator for up to 4 days.  Reheat in the oven or toaster oven to keep them crispy.
