I’m the kind of person where when I’m sad about something I cannot eat. I have zero appetite and pretty bad anxiety, but the not eating makes the anxiety even worse. It’s not great, BUT I found that if I have the right comfort foods like these homemade pistachio crusted chicken tenders I am able to eat. I went through a breakup where I had homemade tenders and sweet potato fries every single night for about 3 weeks. If that isn’t a ringing endorsement for making homemade chicken tenders, I don’t know what is.

If you told me a few years ago that I would be making pistachio crusted chicken tenders from scratch and sharing the recipe on a food blog I probably would have told you you were nuts. Just a few years ago I thought that sharing anything even remotely close to “junk food” on my blog and Instagram was wrong. My feed was a sea of boring kale salads and giant smoothies. I kept hearing about how eating healthy made everyone feel so amazing and somehow I just felt like total crap. I found that by trying to eat perfectly healthy I was introducing unnecessary stress into my life. Today I feel great having bacon and eggs for breakfast, a no bread turkey club for lunch, and some homemade pistachio crusted chicken tenders with sweet potato fries for dinner. Did you catch that? Two out of those three meals didn’t include any green veggies!! Something that would have made me super upset a few years ago is now a normal occurrence around here.

Start with some tenders or full chicken breasts that you can simply cut down into tenders. Then you use a simple breading process, but with paleo and whole30 friendly ingredients.
